Notes about the shift in general:

 Well, entering my shift, the first thing I did was start stretching while Juan Carlos arrived on his shift. He arrived and I started to check the temperature of everything on the line, then I also checked the marinade and checked how much it was and it was a little high so I had to lower it a little and then I went to check the pizzas in front if they were well cooked and cut and it was okay if the tips were not raised so I could change it for a newer one and it was perfectly fine everyone does a good job and always keep their area clean and fill the pizzas upstairs at that time I was busy so I started to stretch a little to help them and then it calmed down a little and they could handle what was coming out so I went to check the merchandise, what is it? It was missing, yes, we have enough for tomorrow and we are very good about everything, only a few things that were missing, such as the toilet paper, but they let me know that they already ordered it and that it will arrive tomorrow and I started taking breaks around 7 and they finished at 9 then I took my break then I went down I went to check the dates of the products that were blessed so I had to give it one more day because they were very good and at that time it got a little busy for a while and then it calmed down so I changed everything I was blessed, then I went up to wrap the cheese cake and put the date on it and put it away and then I went down to go to work where the pizza dough is kept and that's how it was tonight

As for merchandise, we have everything well, only a few things that we are missing like toilet paper and also we only have 3 extra virgin toiletries left and for preparation we have enough, like salad tomato, oh too much and tomato for sandwich as well as lettuce, we are very good in everything just a few things that are needed and that's all

The slices are cooked quite well and very crispy when eaten, just like the Sicilian today, they came out quite well, they fluffed up very well, they cook excellently, it is very easy to take out and has a very good flavor, as well as the dressings, they all feel good. The pizza sauce also tastes very good quality and flavor to give to customers.

Notes for FOH: Well, for today's shift we all work very well and as a team, which is the most important thing to be able to do a good job and the waiters work very well and check the pizzas before taking them to the customers and there were no missing pizzas either. booking a pretty good job today, the truth is that we do have a great work team to fulfill all the things to be able to provide better customer service

 Notes about the shift in general:  When I arrived the rain has not started the downpour, but  minutes after I arrived the deluge started. CG and I spoke about server weather readiness. The alarm did not go off and none of the  GFIs were tripped. It was a good close with all areas clean and organized. All food items were moved to the walk-in coolers.  The produce order was placed for tomorrow. The BEK truck was a little late. Lana and I went over the schedule for nest week and she did very well at identifying areas of opportunity to make bone close cuts. The K-Mods will have to bonce around from Dish/Dough, roto and  marsal on some days. We communicated with the staff about the reduced  hours It was. Wendy completed a quick reference list of closing duties for the BOH. This list was prepared for the FOH in the event a k-Mod leave ill before the end of their shift.   Notes about the shift in general: we had a good set up today and the team seemed ready to work. Raymond and i sat down with an applicant to talk, but ultimately decided against him as he is related to other staff members and we don't feel it would be a smart move. we reviewed other applicant and he did seem to like Vilma so ill get with him about if we could get her started pending her availability. i spent some time filling in on the line and around 7 we started running breaks. we finished running them by 7:30. we had 1 lost ticket pie that we had to fly. it started off really slow and then we got a couple of rushes around 7 and 8 o clock. slices got hit around 8 as well. thing started to slow down around 9. we had a solid team tonight. Notes about the shift in general:  walking in, the close was good. id like us to pay attention a bit more to the janitorial room. Its becoming a consistent missed area in terms or organization. the bathroom also, i had to pick up a bit.   we had a really good start with a lot of people on with dessert and training. i was cautious of this with labor. The guys got started fast as we had that order due at 10:45. Evelyn had to learn how to do the large salads so there was learning opportunity walking in. The large order this morning was just 8 family salads and 9 pizzas. it went out smooth and everything looked great. we had a slow lul for most of the shift and then we got a good push on slices and whole pies that helped a lot     Next shift be on the lookout for: Were set up pretty well. 1.How many pies did we run on the timesheet?  4 every 5 2.
