FRIDAY, MAY 31 2024 BOH PM WENDY

Notes about the shift in general:  It was a lot of traffic today, more than normal, but we got here safe, when i got here Lana update me about everything going on because she got here earlier, everything was good, she talk to me about the changes that we will have on the schedule for next week and how all the game is going to be, shift was a little slow, so we started just to got ready for the shift because we started to get a little more of business, so we knew were gonna be busy, after that we got pretty consistent on tickets, we started to get a little more busy by the minutes keep passing, and after we saw it was already time to start running breaks, with Lana here it was pretty easy to do all the breaks and before 9 we were already done with all the breaks, we were happy that we were a little busy, after this pass week when were really slow, and when the sales are like this we just feel the time flying, we had a couple or runs that make our time go faster, i was glad Lana was ...

5/31/24 Friday a.m. w/Raymond

 Notes about the shift in general:  When I arrived the rain has not started the downpour, but  minutes after I arrived the deluge started. CG and I spoke about server weather readiness. The alarm did not go off and none of the  GFIs were tripped. It was a good close with all areas clean and organized. All food items were moved to the walk-in coolers.  The produce order was placed for tomorrow. The BEK truck was a little late. Lana and I went over the schedule for nest week and she did very well at identifying areas of opportunity to make bone close cuts. The K-Mods will have to bonce around from Dish/Dough, roto and  marsal on some days. We communicated with the staff about the reduced  hours It was. Wendy completed a quick reference list of closing duties for the BOH. This list was prepared for the FOH in the event a k-Mod leave ill before the end of their shift. THURSDAY, MAY 30 2024 BOH PM WENDY

Notes about the shift in general: Started the day with the meeting, it was good, a lot of good things where talked today, on business we were kinda slow, Leo got to leave on time, and it was only Will and Juan, after we were done with the meeting Lana and i just jump on the line and the were send home, till Danilo and everyone else came in, everything was good we started with a slow night, but it was keeping up with the time, we were more busy than last Thursday for sure, we had some busy moments, but we stayed consistent the rest of the day, on slices we were definitely more busy, but Danilo handled everything good, we was coming to the back when it was really slow to help on the line topping or pounding, or even helping making his own pizzas for the front because we were busy, we had a strong team tonight, Lana had to send Bailey for some trash bags, because we didn't had any and PFG dont have any so Bailey got 4 boxes from the store hope that get us through this weekend. 5/30/24 Thursday a.m. w/Raymond

 Notes about the shift in general:  When I arrived the weather was warm and a little humid. The alarm did not go off. None of the GFIs were tripped. It was a good close and all food product were moved to the walk-in with all stations cleaned and organized. I was wondering why we are going through so  many trsh bags each day. So bailey walked the store and counted trash cans and found that we have 25 cans throughout the store. Each case of trash bags hold 75 bags. We run trash twice a day and the math is mathing. There has to be a way to reduce the number of cans or ensure that the cans are safely filled in order to reduce cost. A case of 55 gal. bags is currently $38.07 each.  I met with the PFG Rep. Gina and the meeting was productive. I found out a few things about the vendor.  Among other things, we discussed how our product is being delivered. 5/29/24 Wednesday a.m. w/Raymond

 Notes about the shift in general:  When I arrived the weather was warm and a little humid. The alarm did not go off. None of the GFIs were tripped. It was a good close and all food product were moved to the walk-in with all stations cleaned and organized. Refrigeration gaskets were checked and they were clean. The mop sink room needed a little tender loving care. We are a little low on trash bags. We have enough for tonight. If we run short tomorrow I will pick some up.  BEK truck was received and all ordered items were accounted for. I am meeting with our PFG  Rep  tomorrow and she is bringing samples of 20lb white bags for approval. We ran into an issue with getting the bags, but l think that is resolved. The shift was not as busy as we had hoped it would be, but we did have small pops here and there. TUESDAY 5/28/2024 BOH PM RONALDO

Notes about the shift in general:  Going into my shift today, first of all I was stretching because nothing was slow and there was only Kaylana and Will because I sent the others early because it was very slow so I was stretching while Juan arrived on his shift and I was filling in front of pizzas and once Juan arrived I started to check the temperature of the marinade and then I checked the sanitizers to see if they had also changed the hours of the pizzas in front and I was checking the line that they were not sold at all and I only found a red cabbage container that was already black so I had to throw it away and put a new one in and it was slow to try to send them to their breaks around 7 and they finished at 8:30 then I took mine and when I got off it started a little busy so I had to start covering and then it calmed down I went to check what we were missing in terms of merchandise and preparation, just a few things and I had to change some preparation dates that were overdue...

Tuesday 05/28/2024 BOH PM Lana

Notes about the shift in general:  it was a good start to the shift today. Things were well organized and we saw the damages from yesterday which took out a lot of prep items. The list was a long one for sure today. On top of it being a cheesecake day. We stated out getting the cheesecake mix done and then we got them ready to bake off. Gerardo knocked out cheese before jose and him tackled the dough list. It was a solid prep day and dina did well jumping from prep to desserts as needed. Next shift be on the lookout for: Walnuts need to be cut   1.How many pies did we run on the timesheet?  4 across the board  2. KMOD stuff: Had to make cuts today due to the nature of the weather. 3. Monday 05/27/2024 BOH AM Lana (Memorial Day)

  Notes about the shift in general:  walking in things were good. we had a but of labels to update but mostly the ones in the salad cooler. we need to be sure to be looking at those stickers as well. I ended up throwing away a few items as well. id just keep an eye on things when closing. we had a solid close otherwise and it was an easy set up. After the events of last year memorial day, I felt it necessary to bulk up the prep list a bit. I went to weekend pars for the day. Trucks came in a bit later than usual today but all were checked in and put away in a timely manner. We scheduled an extra for pm but not for am so I was prepared to be on the line all shift. The shift ended up being slower than expected for the most part, but the parts that were busy were definitely busy. We got breaks out of the way early to prepare. We did get very busy around 3. It was hard to keep up with salad having left at 3. We had to have roxana clock in 39 minutes early and Ronaldo 15 minutes ea...
