Notes about the shift in general:
When I arrived the weather was warm and a little humid. The alarm did not go off. None of the GFIs were tripped. It was a good close and all food product were moved to the walk-in with all stations cleaned and organized. I was wondering why we are going through so many trsh bags each day. So bailey walked the store and counted trash cans and found that we have 25 cans throughout the store. Each case of trash bags hold 75 bags. We run trash twice a day and the math is mathing. There has to be a way to reduce the number of cans or ensure that the cans are safely filled in order to reduce cost. A case of 55 gal. bags is currently $38.07 each.
I met with the PFG Rep. Gina and the meeting was productive. I found out a few things about the vendor. Among other things, we discussed how our product is being delivered. I explained that when damaged product has to be returned, it impacts the effective operation of the the store. i.e. multiple returns of ricotta. They also increased the minimum order quantity to 25 from 20 items. I’ll check with CG and Charles on the validity of this. The shift started slowly and did not pick up until around 1:00 p.m. All team members were able to take breaks.

• Sicilians had a good rise and salad dressings were approved

o Jumbo Carrots
Food Pricing Awarness: This is just to be mindful of food cost and not intended to deter us from having an adequate supply on hand. Again, just be aware when receiving these products we should not accept anything but the best quality possible.

The stuff about the stuff:
Notes for FOH: The FOH did well and with no slices waiting to be ran. We had exceptional communication with the FOH and the shift went smoothly.
