7/28/24 Sunday a.m. w/Raymond
Notes about the shift in general: When I arrived the weather was sunny and warm. The parking lot had a few debris. The dumpster was closed with no boxes visible to the public. When I entered my alarm code the system did not malfunction. None of the GFI’s were tripped and refrigeration units were operating at the correct temperature. It was a good close with all line product moved to the walk-in cooler.
It was a steady shift with active sales. All truck orders were entered. All team members were able to take breaks. We are still disbursing prep lists to the staff in an effort to control prep efficiency. There is no prep person scheduled for tomorrow, so it was a push to add additional prep. The staff did their best to split their time between line activity and prep.
I picked up milk. I am off tomorrow and we will be ok with what I purchased until I return.
We had one incident where a transient person attempted make off with 4 gallons of floor cleaner. Josh was able to sop him/her in time.

2. KMOD stuff:
Reminder! Please complete line check on every shift. This is the one of the best tools that we have in managing all of the changes we have made in prep and the areas of responsibility.
3. Food stuff:
We have enough capicola for the p.m. shift. There will be more on the first truck at 4:00 a.m., but without a prep person, it will be a challenge to prep deli in the a.m.
We had a late ticket at 12:00 p.m. We are not sure why the ticket did not print. All printers were checked and restocked before opening.

People:
Dough/Dish: Jose did very well on cookies and his prep list. He left one recipe to be completed tonight.
Prep: Juan did well on prep and completed most of her list.
Z1R: Ronaldo kept tickets moving and on time

Z3R: Juan was consistent on roto and kept pies moving.

Z4M: Raymond/I had to complete the produce order while on marsal and a few other office projects
Sub/Salad: Leo did vey well on his stations.

I gave Juan a verbal high five for holding down prep.
7. What did you teach someone today?
8. Repair issues: There are currently no R&M issues at this time.
Notes for FOH: Great shift with Keri. There were no slices waiting to be ran. Good communication between BOH and FOH.
