FRIDAY, JULY 26 2024 BOH PM WENDY
Notes about the shift in general:
Shift was good, times was going faster because we had a pretty busy shift, i had to help Leti for a little bit because she was getting hit with tickets, but i saw how Danilo was about to fall behind of tickets, because the dough was too hard and it was taking a little bit more of time to pound, so had to help him pounding and i had to go to take more dough out because it was really hard and cold, and i ended up finding a 4 day dough softer than the one we were using so we continue using that one, and that was the way we were able to keep up, because the other dough was making us tired so easy, the tickets getting made only with 10 minutes to be ready, but thanks to the change of dough we were able to go back to normal with the 20 minutes, everything was good the rest of the night we didn't had anything on the fly, we didn't had any issues with prep everything was done, we only had to prep some feta because we didn't had any portion, but everything else was good, we had to help Bailey with dishes because he was really behind with dishes and even Ryan had to help a little too because they were getting out of cups and trays, we started with breaks around 7 and we were done around 9 everyone was able to took a break, everything was made tonight, closing was good, we went trough all the sicilians, i had to take out the garlic knots for tomorrow because they were really small, but now they are good and ready to use tomorrow.

Everything was looking good, Lana asked if it was possible to make some papers for the Subs but we didn't had any time, so it would be a think to do tomorrow morning.1.How many pies did we run on the timesheet?

Just a reminder to check on Leos salad prep for the afternoon shift, we had to be in the middle of the rush prepping stuff for salad station because we were running out.3. Food stuff:
We had a problem with the Lemonade that Juan made it had no sugar, it was only 2 containers left like that and it was a whole recipe that Dina made and it was good, dressings were approved, pizza sauce was approved, Garlic knots were a little small tonight, and the sicilians were good tonight.4. Notes for FOH: Great shift, good communication with Salad station and Roto, we only had one overbooking the whole night, but everything else was good, only one ticket with no time but it was fixed immediately.
