Notes about the shift in general:
it was a good shift. we had a good start. we all jumped into prep and i made a second small prep list for the items like peperoncini and cherry pepper as we were pretty low on them. we got a good mount done. Leo and i tried to get papers knocked out. juan, pedro and ronaldo all took good care of pizzas. pizza were coming out almost exactly as needed but i had them start putting them out 5 minutes early because we had some pies that came out 3-4 minutes late. it was smooth other than that. we had a good amount of business. didnt quite get busy but it was definitely well paced. we had a rush but only for about an hour and then it got back to consistency. the rest of the shift was good.

2. KMOD stuff:
i hung up the labor tracor in the office so that everyone could see it.3. Food stuff:
sicilian was taking longer to rise than normal. first round did bake a little flatmold on some mozzarella. i got with raymond and he contacted a representative

Dough/Dish:gerado only had 2 recipes but he also had to do pan torta
Prep: Dina did a good amount of prep today. i uped some pars
Z1R:juan did well. i sent him to organize the cooler a bit

Z3R: pedro deep cleaned roto door today

Z3M:ronaldo did well. he knocked out romain early on his list and kept pies going
Z4M:
Sub/Salad: Leo had a lot of prep to do. i had him refill before he left
The stuff about the stuff:
need to give extra prep to juan in the morning because we wont have prep Monday morning
Notes for FOH:
the foh worked well today. they seemed on top of things and communication was good
