Notes about the shift in general:

 it wasn't an ideal shift to walk into. i organized the coolers as well as the upstairs area. then i pulled out the Sicilian in the cooler as we were down to one outside. we had some organizing to do to get the night shift set up but we were able to get things set up within an hour. we had a slower start to the shift but had a good amount of rushes throughout the day. no one got backed up or anything like that. Salads and subs stayed well organized and stocked. we were able to start running breaks at 7 and finish up around 9:30. it was a good day overall. everyone was on top of their stations and we were good with prioritizing.



Next shift be on the lookout for:


we will need to get more cannoli cream made

2. KMOD stuff:

i am looking at the schedule. with school starting, leti says she wont be able to work nights during the week. Leo had also accepted more hours at his other job and he will be unavailable to work Sundays. i let them know that neither of them will be guaranteed a 5 day work week with the new limitations on their schedule. the way its set, we likely wont be able to cover peoples time off request on salad sandwich. we will likely have to finish training Roxana for emergencies.


3. Food stuff:


Sicilian was flat for most of the night, we couldnt get a good rice in them because they were pulled so late. i had them place the rack on roto line, but after 6 hours they started baking off really well

Dough/Dish:Meredith did really well. she spent soem time taking care of lemon ices and getting them stocked back up. her and i focused on organizing the freezer as well

Prep: 

Z1R:juan carlos kept up really well. ive seen how well hes started picking up speed and helping out with loading pies as well

Z2R:

Z3R: Carlos was everywhere he needed to be today. he was pounding and working his station as well

Z1M:

Z2M:

Z3M:Bailey still needs to work on keeping his station stocked and realizing that he cant ask for pies when he needs them, the line was busy and he was asking for pies on the fly

Z4M: 

Sub/Salad: Evelin did well and didn't need much by way of help. she was on top of things today


6. How did you show love?

Meredith showed some frustration and stress regarding desserts and feeling unheard. i sat down an spoke to her and it seemed to be a positive conversation. id love to speak on ways we can all support her

7. What did you teach someone today?

i showed Juan and Danilo how to make the veggie sub

8. Repair issues:

the shelf over the dough station is still dragging. i feel it will only get worse.
