8/31/24 Saturday AM CG BOH

Notes about the shift in general:

 

Came in and got roto on. Filled up dish sinks and got dish machine going. Got prep lists done. Did dough list, list called for 5.7 and I put 5 on there. Did have 9 Large 5 day dough and 5 Medium trays of dough. 

Not alot of foot traffic on street getting in this morning. Weather cloudy and looks like it will rain but has not yet just light sprinkles. Humidity is not bad at all and feels nice outside just no sun.

We do have a large order in the pm today! Nice start for pm crew! 

Went through upstairs dry storage and de boxed and organized what was on table left from yesterday. Just need to make sure that if you are opening manager or closing manager on truck days that the trucks need to be put up that day not the next day. 

Raymond came by this morning and brought 2 cases of paper plates so we are good to go on those! Spinach also came in today as well! We have 4 sleeves of hot cup lids so we should be good through the weekend. 



Next shift be on the lookout for:


Be on look out at paper plates(we have plenty to get through today unless we get crazy on slices), hot cup lids and spinach. According to notes they will be in house today.

Let's make sure we are keeping dough cooler organized, not horrible in there but definitely not what it should be. Let us make sure that our team is putting items back in their place as when ordering it makes it harder and also could account for a disordered item.

2. KMOD stuff:


Let's make sure we get all food out of sanitizer buckets. Found one in mop sink with lettuce and salad station items inside. 

3. Food stuff:


We need to make sure we are pulling dessert. Had to pull 2 cheesecakes and 2 tiramisu's to prep cooler. Just need to keep up with it and make sure we are good. Ice's look good at moment. Need to keep eyes on though as they go quick when they do sell. 

House pies looking really nice. Need to watch cheese weight as some looked just a tad heavier but not overly cheesed. Made sure to let guys know. Good taste on slices and nice size.

6. How did you show love?


Made sure to say good morning to everyone, made sure everyone took break. Thanked team for smooth shift.


7. What did you teach someone today?


Showed Leo where the back up cough drops were located.


8. Repair issues:


No major issues to note. Need to make sure we clean on top of baby oven as it is needing some attention. Will get with Wendy and Leti about making sure that gets handled tonight. 

The stuff about the stuff:  

Good close, marsal ovens set right for am team, nothing left out except for one tomato. Stations looked good other than baby oven. Dough cooler needs to be tighter on closes but all and all really good close. 


Notes for FOH:

Nice job making sure to greet guests who walked in. Josh did good job on making sure that houseless and parking lot issues were okay. Josh did notice breakfast klub in our parking lot after open bringing food out to a guest in our lot for pick up. Josh let Breakfast klub know that they can not use our lot to do pick ups during business hours. WE also need to make sure Monday to let BK know that we are putting those tow signs up and will be towing anyone who is not dining in with us moving forward.
