Notes about the shift in general:

 Starting my shift when I arrived I was checking the pizza sauce and the dressings to make sure they were tasty and then I checked the sanitizers. Finishing there I started to make the preparation list for Juan Carlos and then I joined the salad station since the one who worked there had already left but he was pretty slow so I saw what was missing and I told them to do it since he was slow. Then around 3:30 Charls arrived and I had a little meeting with him and he talked to me about how to get organized to work with the team of workers and many other things. Finishing there I went to the pizza stretching station since there was no one there and Meredith was also making tiramisu and she no longer had time to make the Sicilians. So I asked Bailey to help me with that since he was a little slow and I was also checking the tickets that came out in front so that if he finished the Sicilians. And also helping Meredith wash the things that were in the Dish Washer. When Bailey finished I sent him to his break as At seven and since nothing was coming out in the salad, I told Evelin to go in front and help me, then I sent the others and they took their break and finished around nine. From there I saw for a moment that it was slow and I went to my break. When I came down I continued stretching pizzas also filling in front. When Juan Carlos finished with the preparation he came to help me close so I could also check what was missing and put some things away and that was my turn for today and I also thank Bailey who helped Meredith since she was making tiramisu and did not have time to make the Sicilian ones. And that was it.

Well, in terms of merchandise, what we're going to need is mushrooms, tomatoes for salad, and everything else is fine. In terms of preparation, we need to cut Rise Krispy and tomatoes for sandwiches, as well as lettuce for sandwiches, and everything else is in order. Everything is in order to start tomorrow.

The pizza slices today are very good, the Sicilian ones also puffed up very well and rose quite well and when you take them out on the tray they come out quite well, also the dressing and pizza sauce have a very good flavor, everything is very good today.

Notes for FOH:

Today's shift was pretty slow but everything went very well, only the machine where the tickets came out sometimes got stuck, the tickets didn't come out correctly but we kept checking it and it was very good. From there, all the tickets came out pretty well, they came out with the names right, the times were perfect. There was no Pizza la mosca, there was no Overbooking, everyone worked very well and checking all the pizzas that came out quite well and that's how today's shift was.

 Notes about the shift in general:  When I arrived the rain has not started the downpour, but  minutes after I arrived the deluge started. CG and I spoke about server weather readiness. The alarm did not go off and none of the  GFIs were tripped. It was a good close with all areas clean and organized. All food items were moved to the walk-in coolers.  The produce order was placed for tomorrow. The BEK truck was a little late. Lana and I went over the schedule for nest week and she did very well at identifying areas of opportunity to make bone close cuts. The K-Mods will have to bonce around from Dish/Dough, roto and  marsal on some days. We communicated with the staff about the reduced  hours It was. Wendy completed a quick reference list of closing duties for the BOH. This list was prepared for the FOH in the event a k-Mod leave ill before the end of their shift.   Notes about the shift in general: we had a good set up today and the team seemed ready to work. Raymond and i sat down with an applicant to talk, but ultimately decided against him as he is related to other staff members and we don't feel it would be a smart move. we reviewed other applicant and he did seem to like Vilma so ill get with him about if we could get her started pending her availability. i spent some time filling in on the line and around 7 we started running breaks. we finished running them by 7:30. we had 1 lost ticket pie that we had to fly. it started off really slow and then we got a couple of rushes around 7 and 8 o clock. slices got hit around 8 as well. thing started to slow down around 9. we had a solid team tonight. Notes about the shift in general:  walking in, the close was good. id like us to pay attention a bit more to the janitorial room. Its becoming a consistent missed area in terms or organization. the bathroom also, i had to pick up a bit.   we had a really good start with a lot of people on with dessert and training. i was cautious of this with labor. The guys got started fast as we had that order due at 10:45. Evelyn had to learn how to do the large salads so there was learning opportunity walking in. The large order this morning was just 8 family salads and 9 pizzas. it went out smooth and everything looked great. we had a slow lul for most of the shift and then we got a good push on slices and whole pies that helped a lot     Next shift be on the lookout for: Were set up pretty well. 1.How many pies did we run on the timesheet?  4 every 5 2.
