TUESDAY 9/24/2024 BOH PM RONALDO
Notes about the shift in general:
Starting my day when I arrived I checked the dressings that were good in flavor then I checked the temperature of the marinade and if it was at the exact temperature from there I went to see what I was missing to start my shift and everything was in order nothing was needed but at that time it is very slow then I told Evelin to cut paper for the sandwiches to have everything full so as not to do it on the weekend since there is a lot of work and Meredith as it is a little slow and had nothing to do then she started cutting mozzarella for tomorrow then we started filling Pizza in front and at about 6 it did get moving for a while and at 7 I sent them to their breaks and they finished at 9 from there I left and when I finished I helped them a little bit more it got a little slow I went upstairs to put things away there were some empty boxes that were just there I threw them away then we went to throw out the trash to move on because it was very slow today when I returned as nothing came out ticket so I told Gabino to help me clean the cold room where the dough for Pizza is kept so we took out everything that was inside, we threw soapy water and scrubbed the floor then we pulled out all the water that was left inside until there was no water left and if the floor was clean then we had to put all the dough for Pizza back in its place and so it was today's turn it was a little slow but everything went well
Next shift be on the lookout for:
What is going to be needed is to cut the cheesecake and cut the Italian assorted and prepare the dressing. There are only three boxes of mozzarella cheese, but we made enough today so that we don't make enough for tomorrow. Today the Sicilians came out pretty good, everything rose and puffed up very well, the pizza slices are well cooked, very crispy and all the pizzas are very fresh and the toppings as well as the pizza sauce have a good flavor, everything is excellent in each season.

Well, tonight's shift was a little slow but everything went very well all the pizzas came out well with the exact times also with the names well there was only one pizza on the fly at around 4:30 but in the end it came out on time And the people in front all worked very well on everything and checking that everything was going well before taking the customers and always paying attention to each slice of pizza that came out, there was no overbooking, everything went quite well in everything.
