MONDAY 10/28/2024 BOH PM RONALDO
Notes about the shift in general:
Starting my shift when I arrived I had a little chat with Raymond and he told me that when he opened in the morning there was no preparation so he called Bernandina to come and do preparation since there was nothing to start the day and then I started my routine I went in front selling slices of pizza until the other shift arrived at five then I went back and started to stretch pizza all night until 11 and then around seven I asked Juan Carlos to help me with the breaks and to stop preparing for a moment and we all took a break and we finished around 9:30 from there there were quite a few pizzas but in front a lot of pizza slices were sold there was very good sales and around 10 it was a little slow so I went to arrange the merchandise the tomatoes and lettuce what arrived today I arranged everything finishing there then I returned to my work area and that's how today's shift was it was pretty good but everything went very well
Next shift be on the lookout for:
All the preparation is there, there are only a few things missing, but there are enough to start the day, and the merchandise arrived today, the only thing missing is the broccoli, but I already told Raymond that he will bring it tomorrow, and everything else is pretty good.

The pizza slices for today look pretty good and all of the same cut, just like the Sicilian ones, they all fluffed up, they all reached the corners and easily came out onto the tray, also the pizza sauce and the dressings have a very good flavor, everything was excellent.

Notes for FOH:
During my shift today it was pretty good, there was a lot of pizza slices sold as well as pizzas, but everything went pretty well, the waiters worked very well, there was no Pizza On The Fly nor was there any Overbooking, everything was very good and a great team for today's shift.
