Notes about the shift in general:  When I arrived the recycle dumpster was closed and locked. When I arrived I completed an inventory check before starting the PFG truck order. I completed a scheduled review of the Toast Midtown inventory. Thanks to Weston for assisting with reorganizing our inventory. This will assist Will with taking the lead on the monthly inventory. I then reviewed the BOH schedule for next week. The K-mod schedule for next week is completed and published. We pick up a 30 pie order for Friday at 4:30 p.m. I contacted Alsco and they will bring mop heads in the morning to help us out until Friday. A few team members are not feeling well. Please encourage all team members to practice frequent handwashing. We had a deferred order that purchased two gallon beverages, one teas and one lemonade. I ordered the lids for our gallon jugs in May and I did not realize that they did not come in. I will follow up with the vendor on the status of the caps for the gallon jugs.

It was a steady flow for the shift. Marsal was steady but not very busy. Roto had a very steady flow but not overly busy. Breaks started at 6:50 and ended at 8:15 p.m. All team members were able to take breaks.


Next shift be on the lookout for

Fresh mozzarella. Will will pick some up in the morning.

Notes about the shift in general:   starting the day, it was a little slow so we were finishing up with the preparation and we also made cherry Pepper, when those from the afternoon came in. Notes about the shift in general:   Starting my day when I entered the restaurant, everything looked pretty good, so I started with the preparation list. Then I counted the doughs, while Juan Pu was filling on the line, from there we started with the preparation, Then we got a ticket for 16 medium pizzas, I wanted it at 11:30 so we hurried and started on all the pizzas in front around 10, when we finished we started with the order, then a lot of sandwiches also came out, so we were working as a team and everything went pretty well, the pizzas came out on time as well as the sandwiches, and around 12 I started with the break and we managed to finish around 2, from then on if quite a few pizzas came out to go.
