6/8/25 Saturday Mid w/Raymond

Notes about the shift in general: When I arrived the recycle bin was closed and locked. I picked up basil, anchovies, and romaine. Two truck orders were entered today for Monday. It was a slow night for a Saturday. There was an unexplainable incident that took place while I was covering Marsal. Bailey came to me and casually mentioned that a person walked out from the kitchen. When I looked into the situation I found that the person walked up the stairs from the outside, entered the unlocked door on the second floor. He then walked down the stairs and on to the Roto line and then after a few seconds he left the BOH and exited the front door, through the parking lot and down Travis street. It is time for a very direct conversation with our staff so that they clearly understand the importance of safety for themselves and our guests. The ease at which the person walked through non-guest areas unchallenged was amazing! Not one staff member voiced opposition to the presence of an unknown person walking from upstairs, on to the Roto line and then out the front door. I am absolutely blown away. Videos of the incident were shared on the Ops. channel.

6. How did you show love? 


Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH. I asked the FOH to stab their tickets at Marsal. It causes confusion when tickets are left on the glass.
