MONDAY 6.16.25 BOH AM WILL

Notes about the shift in general:

The recycle bin was empty, but locked open on arrival. We received shipments from BEK, SOFO, PFG, and Houston Avocado. Everything was accounted for and looked good. After putting everything away, dating product, organizing and getting rid of boxes, I helped Jose knock out garlic knots and Juan set up house pies. I discussed dessert prep with Meredith. We ran through breaks. There was a lot of line prep, but less than usual prep for Wendy. It was a slow day so she was first cut around 2pm. I finished balling cookies which was the only prep item left. After this I cut Juan early. I am also leaving a little early to help on labor.

Only the sicilians at the very bottom of the rack were good to go this morning, now at 4pm the rest are looking great. Dressings were on point today.

Bought more instant coffee for BOH. Made chorizo and potato tacos for everyone.


Notes for FOH: They were on top of what little action there was today. Good communication from Josh as always.
