WEDNESDAY 6.18.25 BOH AM WILL

Notes about the shift in general:

Received orders from BEK and Houston Avocado, everything looked up to spec. I had Pedro here to repaint the racks behind dish, I picked up two more cans of spray paint for him to finish the job. He also cleaned behind and underneath where those racks lived, who knows when the last time that was done. I also had him clean the floors to the produce cooler when he was done with his primary task. Overall slower Wednesday with salad/sandwich being the main station hit. I helped Leti bag bread and make sandwiches so she could finish her prep. For desserts as of right now we are good, we will check again on Friday to see if anything changes.

2. KMOD stuff:

Meredith mentioned that she thinks the plastic wrap we are using is negatively affecting the Sicilian press. She says it seems stronger, more durable, but it is protecting the dough more than it should. Since there have been more issues with Sicilians recently it's worth investigating. 

3. Food stuff:

Decent rise on sicilians, good looking house pies, beautiful produce, dressings on point. Garlic knots were a little under risen so they received an additional two hours proofing time today.
