7/1/25 Tuesday Mid w/Raymond

Notes about the shift in general:  When I arrived the recycle dumpster was closed and locked, but it was not picked up today. I called Republic and they said that they could not access the bin, but that was not correct. They entered us as a missed pickup and they will be back out tomorrow. On the way in, I picked up three gallons of milk. The BEK truck order was entered. I went over the Toast application with Ronaldo and Will.. I want them to have a better understanding of how to review Product-Mix and gauge our sales and usage over any given time period. We walked the store looking for opportunities to take care of detail cleaning and needed R&M.

The shift started a little slow and picked up with a consistent pace. Breaks started at 6:50 p.m. and ended at 9:00 p.m. All BOH team members were able to take breaks.

Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH
