6/10/26 Wednesday Mid w/Raymond
Notes about the shift in general: When I arrived, the dumpster was closed and locked. I walked the store and confirmed inventory and placed the PFG truck order. I worked on the game plan for the World Cup. The shift started slow but then picked up from 7:00 p.m. to 8:00 p.m. The team did not have any problems handling the volume and kept tickets on time. I am looking into Monday's sales. The breakdown of pies sold is unusually low. Breaks started at 7:00 p.m. and ended at 8:00 p.m. All team members were able to take breaks.
The countdown to the World Cup is on, starting with Germany vs Curacao on June 14th. We are aware that the World Cup will bring significant activity to the Houston market. I am reviewing staffing and dough prep to ensure we are ready for the increased sales.
Next shift be on the lookout for:
Mike the plumber will be in at 8:00 p.m. to purge the hot water heater

2. KMOD stuff:
* Please continue to challenge PAR bake on the house pies and Roto pies.
* FOH please go over the deferred orders with the k-mods.
* One part of our plan for the World Cup will be to fully set up Marsal but not use it until volume dictates.
3. Food stuff:
* I spent some time with Mateo and watched his bake on pies. he is coming along and improving.
*Sicilian pies had a nice rise, and a light taste.
* Whole pies were looking very nice.
* Salad dressings tasted and approved
* Please continue to complete temperature checks on all items

6. How did you show love? I gave the team a verbal high five and told them that I have complete faith in them for the World Cup and the post events.
Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH. I spoke with the FOH Shift Leads regarding some potential activity that may happen during the World Cup. I cautioned them about changing our product offering with unusual requests from world travelers. They may bring with them their unique dining preferences and want us to step well out of our acceptable accommodations.
