6/16/26 Tuesday Mid w/Raymond
Notes about the shift in general: When I arrived, the dumpster was closed but not locked. I walked the store and confirmed inventory and placed the BEK order. Glazer was out Moscato and that left our order short of the minimum. I increased the order and informed the Rep that we need the case delivered as soon as possible.
We had one car towed during the day. The drive did not come inside, she called the tow service and dealt with them. Both microwaves turn table went out. I was able to fix one and I will replace the motor on the other one tomorrow.
The shift started slow but then picked up at 6:30 p.m. to 8:00 p.m. Breaks started at 6:30 p.m. and ended at 8:00 p.m. All team members were able to take breaks.
The World Cup tomorrow: June 17th Portugal vs Congo DR. This is the game with Cristiano Ronaldo

2. KMOD stuff:
* Please continue to challenge PAR bake on the house pies and Roto pies.
* FOH please go over the deferred orders with the k-mods.
3. Food stuff:
*Sicilian pies had a nice rise, and a light taste.
* Whole pies were looking very nice.
* Salad dressings tasted and approved
* Please continue to complete temperature checks on all items
* CLOSING THE LOOP: I spoke to dough prep, Jose and Gerardo, about the paper found in a whole pie by a guest. They are very conscientious, understanding the need to be careful
* I spoke to Ronaldo about Dina's concern with the mill weight of the aluminum foil. I am working on locating a heavier weight product.
* The humidity has been off the chart in the building. I asked Drew to remind Ryan to leave the setting at 75 degrees overnight.
* I picked up another case of Chocolate Chunk for the cookies. I was informed that BEK is running short and they may be out for a little while. I will try to offset that additional cost elsewhere in this week's truck orders.
* Tomorrow I will pick up Milk, and Oats Milk

Notes for FOH: Slices were moving quickly at 6:30 p.m. and there was good communication between the BOH and FOH.
