Notes about the shift in general:
The day started off pretty well; we had a rush where a lot of sandwiches and pizzas went out. When things slowed down a bit, we used that time to finish up prep work, working as a team to get everything ready and restocking the front line. When the afternoon crew arrived, I used the time to put in the Houston Avocado order for tomorrow and organize the vegetable walk-in cooler. Then I helped Lety restock her line to get everything set for the evening. I noticed the pizza station was a bit slow, so I prepped some cherry peppers for them. Things picked up nicely around 5:30, and a lot of tickets were coming in around six. We started taking breaks—covering for one another until the whole team had theirs—and I checked to make sure everything was in order for the night.

The Sicilian-style pizza had the perfect thickness. The slices are crispy, and the dressings and pizza sauce taste great.
