Notes about the shift in general:
When I started my shift, everything looked pretty good and clean, so I began with the prep list. Pedro and I started restocking the line, and then we moved on to prep work around 10:00. We started making pizzas for the front line around 11:00. Just as we had everything ready, a rush of orders came in—there was a ticket for eight pizzas, followed by others for two or three—so I didn't get to take my break until around 12:30. The whole team took their breaks after that. Work slowed down starting at 1:00, so we used that time to finish the prep work we hadn't had time for earlier. We also baked cheesecake today, and I went over two bread recipes. From 3:00 onwards—once the afternoon crew arrived—we started restocking a large number of pizzas for the front line. I used that time to place the order for avocados for tomorrow and checked to make sure everything was in order.

The Sicilian pizzas look really tasty and delicious today, as do the pizza slices. The dressings and pizza sauces have great flavor.
