Notes about the shift in general:
It was a pretty quiet start to the day; orders were coming in, but not constantly. We finished up some prep work—Leti left at 3:00, and we took turns covering the salad station; Pedro also left a little early. We stayed on the line until the afternoon crew arrived. That’s when I took the opportunity to put in the Houston order and organize the vegetable walk-in cooler, checking dates. I updated a few labels—adding an extra day since the produce still looked really good. It was quiet—we prepped a batch of cherry peppers—but things picked up a bit later. Around 6:00, I started handling breaks, covering everyone at the salad station as a lot of sandwiches were coming through. Evelin was working on paperwork for the weekend.
