Tuesday 10/31/23 BOH PM Lana

          Notes about the shift in general:  it was a busy start with a lot of tickets in for later times. we pushed though that with some extra staff in. by about 7:30 it started to slow down and it was the occasional pizza. i cut danilo and gabinon by 9 Next shift be on the lookout for: spring mix. we ran out around 8:30 and bailey ran and grabbed a bit more. watch out for it until produce comes in 1.How many pies did we run on the timesheet?  4 every 5 2. KMOD stuff: carlos asked for his schedule to be pushed back to 4:45 as hes been having difficulty getting to work on time from his other job 3. 10/30/23 Monday a.m. W/Raymond

Notes about the shift in general:   It was a good close. Both walk-ins were clean and orgsnized.  The day started with the opening team prepping for the large order tomorrow. Dina and Gerardo did very well on the dough and prep lists. Pedro and Juan really pushed hard to complete their lists While I was assisting dough prep, a check printed in error. Pedro and Juan prepped the 7 pies and put them in the oven. Ross came to me and informed me that the ticket printed in error and that the pies were put in the oven. Instead of trashing the pies, I suggested that we finish baking the pies and give them to the businesses that assisted us  when we  requested their assistance.  Next shift be on the lookout for: Cookies for the large order 1.How many pies did we run on the timesheet?  2/5 2. SUNDAY 10/29/2023 BOH PM WENDY

Notes about the shift in general:  Shift was busy, everyone got a moment of rush, the new guys are keeping up really fast, i just feel that Juan Carlos needs to get a little more of a speed but they are doing really good, on the busy time everyone got to work as a team, the new guys really new how to work as a team, we got in a moment where we didn't had anything and that's when everyone started to take a break, so around 9 we started to get busy again, specially on Salad subs station, but it was a pretty good active day. Next shift be on the lookout for: I think is nothing that we would need as a 911, just keep everything up for the big order. 1.How many pies did we run on the timesheet?  4/5 5/0 2. Saturday 10/28/23 BOH PM CG

Notes about the shift in general:   Very slow start to shift. Not much going on. Let Jose stay on til 4 instead of 3 due to the dough list still have 5 recipes as he had to make sub bread and being solo with dish is alot. He wanted to at  least  finish up dish so that Bailey would be okay to start pressing Sicilians and get dough list going as he has that plus dish to do. We had a small pop in marsal but nothing that Roxana and Danilo couldn't handle. Juan Carlos is doing a good job on pounding and he is measuring out cheese and also learning a bit of topping. He just needs to build up speed and also pound out dough just a bit more. I think it's the same thing when I first started and he just needs to pull dough another rotation or two. Carlos on Roto with Gambino is great. You honestly can't even tell he is a trainee. He is doing really really well so far. Everyone took break and breaks got done by 9:25pm. Notes about the shift in general: It was a very good close. A lot of detail cleaning was completed. The shift started very steady. I moved Ronaldo to roto line to help with the large order.  All BOH was able to take breaks. I spent a large percentage of the time on dough prep. 10/27/23 Friday a.m. w/Raymond

Notes about the shift in general:   It was a good close. The day started well with derferred orders. I moved Ronaldo to the roto line and I took over marsal. Before we knew it we were booked out to 12:00 p.m. At our busiest, I had to cover both marsal and assist sub/salad. Leo was absolutely swamped with orders on sub/salad. After the pop, the shift was steady. Will, Juan and Ronaldo were able to put out 35 pies in 25 minutes. The teamwork was absolutely remarkable. We had a late produce truck arrival that caused us to run out of romaine for a short time. I was able to purchase romaine from the store. The delivery drivers from Alsco were less than professional. The driver in the morning was frustrated because he could not work the combination on the door and he then started to bang on the window with enough force that Mettler had to admonish him to take it easy. Later in the afternoon another drive came back to deliver gloves and he was at best curt. I call our rep and informed him...

10/27/23 Friday BOH PM CG

Notes about the shift in general: Pretty slow feeling Friday. We had two new hires training in boh. Carlos and Juan Carlos are doing well and really impressed in where they are for being only a few days into training. Carlos is doing great on Roto and Gambino did great working with him. He works at star pizza so he has experience. Juan Carlos also has pizza experience and is doing good on pounding. I think in next week or so he will be solid on pounding on the weekends. Everyone in boh had great attitudes and did really well working together throughout the shift. Wendy worked on the line with the guys and gals and made sure pies were coming out on time and helping out were she was needed. I finished up some office items : BEK order guide so that I can start working this next week with Raymond on orders and tomorrow I should have PFG and Sofo order guides done for him as well. I got all invoices into food purchasing sheet and done. Tomorrow I will scan over to the office team...
