7/1/25 Tuesday Mid w/Raymond

Notes about the shift in general:  When I arrived the recycle dumpster was closed and locked, but it was not picked up today. I called Republic and they said that they could not access the bin, but that was not correct. They entered us as a missed pickup and they will be back out tomorrow. On the way in, I picked up three gallons of milk. The BEK truck order was entered. I went over the Toast application with Ronaldo and Will.. I want them to have a better understanding of how to review Product-Mix and gauge our sales and usage over any given time period. We walked the store looking for opportunities to take care of detail cleaning and needed R&M. The shift started a little slow and picked up with a consistent pace. Breaks started at 6:50 p.m. and ended at 9:00 p.m. All BOH team members were able to take breaks. TUESDAY 7/1/2025 BOH AM RONALDO

Notes about the shift in general:   Starting my day, upon entering the restaurant, everything was perfectly clean and everything was in its place, so first I made the preparation list and delivered to each area. Then I counted the doughs and filled them in the line. When Pedro arrived, we were preparing and around 10:00 we started with all the pizzas. When it opened, we already had everything ready. We had a ticket, but until 11:40, so I took advantage of the time to start with the breaks, and we managed to finish at 1:30. From there, we finished the preparation that we had pending, so we were working both in front of and stretching pizzas, since it was just Pedro and I, but today there wasn't enough, so we were without problems and working as a team, everything went perfectly well. When the afternoon team arrived around 4:30, I took advantage of my time to place the Houston Avocado order for tomorrow.
