FRIDAY 9/12/2025 BOH PM RONALDO

Notes about the shift in general:   At the start of the shift, it was a little calm, so I made the most of my time. I cleaned up outside and also put all the boxes in order and organized the upstairs where we keep everything when we finish. I was checking all the pizzas and everything was going pretty well. Around five o'clock it started to get a little busy, but there were quite a few of us so it was no problem. Then I helped out a little at the oven and I also watched Freddy work. He does it quite well, he just needs a little more agility, and also Belinda, even though it's her second day, she already knows quite a bit about sandwiches. Only with the salad, she still needs to learn the other salads a little. So I started taking breaks at six o'clock and everyone left. Then Ramona told me she was going to leave around eight o'clock since there were quite a few people. I said yes since there were quite a few of us, and that's how I ended my shift. Notes about the shift in general: We received orders from BEK, SOFO, Houston Deli, and Alsco. Everything was accounted for, put away, and organized. I had Raymundo training on the line today, he did well. We have a lot of training going on tonight. I ordered produce for tomorrow and grabbed milk. It was slow for a Friday, but started picking up late afternoon. Next shift be on the lookout for: Produce from DiMare 1.How many pies did we run on the timesheet?  4 across the board 3. THURSDAY 9.12.25 BOH AM WILL

Notes about the shift in general: We received orders from PFG, SOFO, DiMare today. I did the schedule for next week. I created a document to track Diego's training. The bottom Marsal oven went out 3 times today. It is currently running, but 2it's time to change that thermocouple again. It'll be the third time in a year. Pedro is going to change it tomorrow morning. It was a slow for a Thursday. I cut Leti 2 hours early, Leo 1 hour early, Jose 1 hour early, and Dina when she finished prep at 3:30pm. Next shift be on the lookout for: I did not order produce for tomorrow. We should have plenty to make it to Saturday. 9/11/25 Thursday Mid w/Raymond

Notes about the shift in general:  On the way in I stopped and picked up a lock for the recycle bin. The previous lock was cut off.  The combination was shared on slack and 7shift. The lower massage oven was turning off during the shift. I contacted Fastcility and had them forward a credit application to my attention. I will complete the application and forward back to them. Both of the ovens are in need of PM. The Print Wizard malfunction and would not print labels for a while. The print Wizard is back online at this time. I will portal a new power cord for the Print Wizard. Schedules were reviewed and posted for next week. Our new team member Balinda started her first day of training tonight.  A very considered truck orders were placed today due to the current sales volume for the week. 9/10/25 Wednesday AM w/Raymond

Notes about the shift in general:  When I arrived the recycle dumpster was closed but not locked. Someone cut the lock on the dumpster. I have requested a replacement from Republic. When I entered I entered the truck order for PFG and DiMare. I contacted the City of Houston Inspector regarding the latest grease tract testing. Ryan the City Inspector informed me that Cynthia will still need to appear for the hearing in October. He will request a dismissal of the citation based on the test performed by our independent lab and their retesting results showing us well within the acceptable parameters. The shift started a little slow and picked up around 12:30 for Marsal. Roto and Sub/Salad also saw a small pop that did not last very long. There was an incident with Bailey and the security from across the Windbern street. Cynthia addressed the matter with Andrew the investor and there will be ongoing conversation with Bailey when he returns. Next shift be on the lookout for Pepperon...

Notes about the shift in general:   Starting my day, I was stretching Pizza and also covering the salad, since there was no one in that area we took turns with Will but the day was a little slow so there were no problems, we already started to fill a lot of pizzas for in front, when the afternoon people came in, I took advantage of my time to make a small order of Houston avocado then I cleaned the shelf where the flour is put, since it was quite dirty I cleaned it while they started making a Cherry Pepper and also Evelin did a lot of paperwork for the weekend and around 5 it got a little busy and around six I started with the breaks, I was covering each one of them and the whole team had their break, and then I was changing some leibos that expired today, I had to give him one more day since it looks pretty good, and so I finished my shift also I told them that if it continues slow to send Diego around 10 I also told him Next shift be on the lookout for: We are up to date with all...

MONDAY 9.9.25 BOH AM WILL

Notes about the shift in general: We received orders from SOFO, BEK, Houston Avocado, and PFG this morning. We put everything away and made sure new product was dated. Leo doesn't normally open solo so I walked him through dough rotation and count again and helped him set up the line and with a little prep. After that I went to grab another case of Rainwater to add to our stock since the vendor will be out for a few weeks. After that I did inventory and ordered produce for tomorrow. It was definitely a slow shift, even by Monday standards, we ran as light as possible but there is some training going on. Notes about the shift in general:   starting the day, it was a little slow so we were finishing up with the preparation and we also made cherry Pepper, when those from the afternoon came in. Notes about the shift in general:   Starting the day, we started by making all the pizzas, already to open when it opened, they started the breaks when it finished, we were finishing some preparation and we also started to fill in front and starting in the afternoon the other shift came in around four it calmed down a bit, it was slow, so I took advantage of my time cutting the red chilies and putting it on the tray to have everything ready for tomorrow when it finished. Notes about the shift in general: Another steady day shift. After getting set up for the day, I helped Jose knock out garlic knots and set up the pizza line. Evelin helped me do some line prep so that when Pedro walked in at 10am he could just focus on house pies. Once Ronaldo was up front, I ran to pick up Spring Mix, Rainwater, and Topo Chico. We would have normally had enough Spring Mix, but we had a deferred order for 3 family pear gorganzolas and I wanted err on the safe side. There was a 12-pie deferred for 3:30pm that went out on time. Everyone took breaks. Cynthia did Fredy's orientation and I set his training schedule for the week. Smooth shift. Next shift be on the lookout for: Check that deliveries are complete, check produce from Houston Avocado, and keep an eye on Pepperoni. SATURDAY 9/6/2025 BOH PM RONALDO

Notes about the shift in general:   Starting the day, I was at the oven, cooking pizzas when the afternoon guys came in, I saw that there were quite a few of us, so I started helping Julio with the Sicilians and when I finished, then I started helping with stretching the pizzas, if too much came out after 5:30 it got quite busy and a lot of Sicilians came out to take away as well as pizza slices, around six I started with the breaks, covering each one, those who were going managed to finish after eight. From there I helped them with covering the pizzas and we also went back to refill the pizza in front, since it was running out and that's how I finished my shift Next shift be on the lookout for: The things missing for tomorrow are pizza sauce, lettuce for sandwiches, and everything else.
