SUNDAY 7.6.26 BOH AM WILL
Notes about the shift in general:
Solid Sunday. I helped Jose knock out garlic knots. We had decent pops around noon and again from 2-4pm. There was a good amount of prep to keep the team busy. I spent a little bit of time cleaning and organizing to be ready to receive deliveries tomorrow. and went over produce prices for next week.
Next shift be on the lookout for:
Deliveries from BEK, SOFO, PFG, and Houston Avocado tomorrow.Meredith is doing both desserts tomorrow, the only thing missing is rum which I will pick up when Spec's opens.
1.How many pies did we run on the timesheet?
43. Food stuff:
Sicilians had a good rise, but several pizzas had dough pouring out the side when I arrived. I discussed it with Raymond, Ronaldo and Jose, and followed up with Iran about best practices. I will be able to see how he does today tomorrow morning.All other pies were great, cookies bake was excellent, dressings were approved.
Temps were correct.
