It is important that we not allow cooks to get new oven brushes without notifying a manager. The blade needs to be removed

It is important that the prep team remembers to portion cookies every night to ensue a time bake off the next day.

Z1R: Gabino has become one of our stringest Rotoflex cooks
Z2M: Roxana has become more involved in loading pies at Marsal
Dish: Herman informed me that there were dough trays without a timer in the hallway just as I asked him to

I spoke with Estella and thank her for he diligence in the prep area

Notable things that happened:
• It started of as a slow shift and then picked up around 7:00 p.m.. The sales for the day was $13,571. FOr the P.M. day part is was $7,687. A number of cuts were made in prep and line to keep pace with sales. I noticed on my closing check that cookies were not portioned. Gabino, Lia and Idael quickly assisted me in taking care of it.The printer at Marsal ran out of paper and the last 2 orders did not print.
