4/29/23 Saturday PM w/Raymond

Notes about the shift in general: The shift was very steady and staffing was adequate for the sales volume. I picked up a case of pears that was missed on the truck order. The energy was high for the shift and team members focused on the task at hand. Meredith was cut early in order to control her time for Sunday’s overnight dessert prep. I spoke to the BOH team and reminded them that the volume coming from the BOH should not be louder than the volume of the music set for the FOH.  Next shift be on the lookout for: The bread bake off, there is little additional backup. 1.How many pies did we run on the timesheet?  5/5 and 4/0 2. 4/28/23 Friday P.M. w/Raymond

Notes about the shift in general: The shift was very full of energy. The BOH had enough staff to keep up with sales demands. We were getting the anticipated business we want. All areas were very busy and I was able to touch all areas.  Due to the shortage at the FOH, I had the privilege of running slices to our guests and it was so nice to see the faces of our guests. Rubil was somewhat disruptive in his interaction with some of the cooks and Wendy.  He has an above it all behavior that causes his co-workers to not want to deal with him. His disrespectful communication with Wendy casued me to sit him down and have a conversation with him. During our conversation, he informed me that he knows how good he is and that I we have to make a decision about his employment he can find work elsewhere. I told him “congratulations, I am very happy for you. Clock out and leave. Cynthia and I will be speaking with you.” I have seen his dissatisfaction unleashed and I did not want him return...

Thursday 4/27/23 AM BOH CG

Notes about the shift in general: Pretty slow day. Had one 7 pie deferred order. Everything went out on time and good. There were no kick backs. I did throw out a few slices(corner of Sicilian that was rounded, some sausage garlic with too much garlic and some cheese that had a sauce ring visible) in the beginning but slices got better and tasted great!   I put in orders for BEK, PFG, SOFO and Houston Avocado for Friday! Jordan switched shifts with Leo so that he could have Sunday off. Next shift be on the lookout for: -Cucumbers at a 2 dial size -Romaine cut 1x1 and done first thing in am so that we are not throwing away as much as we are with it not looking great next day. -Eggplant cut 1x1 -Salad Dressings: making sure taste is good and consistent 1.How many pies did we run on the timesheet?  5/5 2. 4/26/23 Wednesday p.m. w/Raymond

Notes about the shift in general: The shift started off steady and stayed steady throughout the shift. Mateo was kind enough to come in and cover for Tamara. I spent the night moving between prep, marsal, sub/salad and rotoflex until the end of the shift. At the end of shift there were a large number of slices ordered 25 minute prior to close. We ran short on pepperoni and spinach white pies, which was due to my attempt to control waste with only 20 minutes left prior to close. We had one last pie with a pick-up time of 11:30 p.m. that required us to continue selling slices past our normal close time. In the future I will ensure guest readiness to ensure that we are providing timely guest service although a few slices may be wasted. 1.  How many pies did we run on the timesheet (⅖, ⅗, etc)? 4/5 5/0 2. KMOD stuff schedule was posted. Meagan got with me about pay rates for Juan pu, pedro garcia, ronaldo, and elizabeth. im going to portal things now. i also portaled silvia out  3. Food stuff (Notes about food issues) slices were great today. we didn't have any real food issues today. We had a man come in and he saw me checking the house pies and he didn't like that i was touching the pizza at all. He had thought i wasn't wearing gloves, though i was. i did tell the team to make sure they are wearing their gloves and washing their hands 4. People (Z1R, Z2R, Salad, prep, etc) (Salad: Juan- he did great, even helped top pies in downtime, wants to be a trainer, etc) Tamara didn't come in for her shift. 4/24/23 Monday BOH PM CG

Very slow night and never picked up. Empty in the streets. Weather was nice just not super sunny but nice cool breeze.  1.  How many pies did we run on the timesheet (⅖, ⅗, etc)? 5/5 and 4/10s 2. KMOD stuff I organized the dough cooler again. I am going to slack the before and after so we can get with Joel as when the truck is put up I expect it to really be put up and debated and rotated. Everything was on the shelf but definitely not organized. It should look like a grocery store shelf not a warehouse. Let's make this an area we go and touch product in as we have to keep it organized as if we start building the business we can not be fighting this battle. They know the expectation as does Joel so we need to have a talk with him about that and his prep time as Bernadina is killing it. I did go through produce cooler as well and got some items off other shelves but nothing too bad in there as far as organization.  I did put hands on dry storage as that does get messed up ...

We are going to talk about in kmod meeting but we HAVE to try to make time to get them done every shift.  Dough Cooler: I went in there and organized. I took everything out of  boxes and got everything up on the shelf. I took out the broken dungage rack in the back that was holding the mozzarella and it opened up so much more space. I have taken pictures and slacked them so this is how we need to maintain it and make sure our boh is keeping it up.  I organized up stairs storage area in phone bank area yesterday and I also slacked photos of that as well. Again, we need to keep it organized. I saw an empty box where plates are and I asked Riley who it was who just took the last plates and left the empty box and she said Karma. 4/22/23 Saturday BOH PM

1.  How many pies did we run on the timesheet (⅖, ⅗, etc)? 5/5 and 4/10s There was an overbooking at 7:40-7:45 due to Sicilians only getting one time slot each. There was also another overbooking later that Niki caught and let me know about. There were only 4 tickets I saw from time I came in at 3pm that had no time at all on the ticket. There was also 2 tickets that did not allow for enough time to be made (16min and 18min) but we did get them out on time just had to push a bit but we did not have our pop when that one happened which helped. 2. KMOD stuff We need to make sure that Blogger notes are done before we leave the building moving forward. We are missing quite a few days and we need these notes even if nothing happens in the shift that is crazy or we think is not important. I know we have been busier and having to push us and our teams harder since we are working with less staff but we need to get them done or find time to do it in shift. We will talk about ...
