Notes about the shift in general:
The shift was very full of energy. The BOH had enough staff to keep up with sales demands. We were getting the anticipated business we want. All areas were very busy and I was able to touch all areas. Due to the shortage at the FOH, I had the privilege of running slices to our guests and it was so nice to see the faces of our guests. Rubil was somewhat disruptive in his interaction with some of the cooks and Wendy.
He has an above it all behavior that causes his co-workers to not want to deal with him. His disrespectful communication with Wendy casued me to sit him down and have a conversation with him. During our conversation, he informed me that he knows how good he is and that I we have to make a decision about his employment he can find work elsewhere. I told him “congratulations, I am very happy for you. Clock out and leave. Cynthia and I will be speaking with you.” I have seen his dissatisfaction unleashed and I did not want him returning to his assigned area spewing controversy. Rubil flat refused to take any ownership in the reported problematic communication with his others.

Dough/Dish:
Prep: Ana and Eli were powerhouses and completed the prep. Eli was cut first and Ana completed the closing duties
Z1R: Gonzola kept pace with pounding and did not fall behind
Z2R: Lorena was challenged but she did not fall behind all night
Z3R: Rubil did not have any late pies or fly pies and stayed on time
Z1M: Jose kept the pounding at the marsal moving and timely
Z2M: Evan was very efficient at marsal and covered all marsal positions for breaks
Z3M:
Z4M: Roxana has really taken ownership of marsal and has a commanding control of all positions in this area
Sub/Salad: Once again Leti was rocked, but she pushed to keep all tickets on time. I had to assist her for just a short time

I gave Lorena a verbal high five for assisting on sub/salad

I demonstrated for Meredith how the pan sicilian

The sensor for the rotoflex is hanging low again

Notes for FOH:
Niki was rocking at Expo. She was stuck at expo so I was able to assist with some FOH management duties such as changing the count on sicilians in Toast and running slices.
