Notes about the shift in general:
The shift was very steady and staffing was adequate for the sales volume. I picked up a case of pears that was missed on the truck order. The energy was high for the shift and team members focused on the task at hand. Meredith was cut early in order to control her time for Sunday’s overnight dessert prep. I spoke to the BOH team and reminded them that the volume coming from the BOH should not be louder than the volume of the music set for the FOH.
Next shift be on the lookout for:
The bread bake off, there is little additional backup.

We had one late sub. Jordan was on sub/salad. The chicken was completely heated for the chicken parmesan The bread is looking good for the bake off tomorrow. We had enough bread for the shift but there was no additional backup.
We are purchasing 4” shallow amber pans to heat smaller quantities of marinara for the FOH. We are trying to reduce or eliminate the amount of marinara that we have to quick chill at the end of the night.

People:
Dough/Dish: Bailey maintain an organized dish area
Prep: Ana and Eli were powerhouses and completed the prep. Eli was cut first and Ana completed the closing duties
Z1R: Gonzola did very well at pounding
Z2R: Lorena was very strong at topping as well as sub/salad
Z3R: Rubil did not have any late pies
Z1M: Ideal kept the pounding at the marsal timely
Z2M: Evan was very efficient at both marsal and rotoflex line
Z3M:
Z4M: Roxana has a strong command of rotoflex
Sub/Salad: Jordan struggled a little. I discussed station readiness going into the shift.

I gave Ana and Eli high five for working to complete the prep list
7. What did you teach someone today?
I communicated to Bailey the need to remove as much water from the dough bins as possible. This helps the dough prep team to not have to spend so much time drying bins
