Notes about the shift in general:

 Today was a good day, we started a little slow so i put Idael and Mateo to do a deep clean, they clean the ceiling where the air conditioning exhausts are, i told them to move everything inside of the dough cooler and clean, they clean the wall under the tables on prep, behind the dough mixer, and the drainer on the dish area cause it had mold under, and it had some black spots where the flies leave they eggs, after that we started to get busy, we where doing okay but with someone training, and idael we had to remake like 5 pies because we were missing a toppings, and some didn't have pizza sauce around close to the crust so it was looking a little white, i send Jordan home early cause he was not feeling okay and Estela took his position, she was a little nervous but she did good, Mateo ask to leave early cause he had to take to bus at 10:40. A little crazy night but nothing that we cant handle.




Next shift be on the lookout for:

we need to check the dish machine because it doesn't see like is trowing soup and the sanitizer.

Sicilians were looking good tonight, we got thigh on the bread but we made it through.

Busy night one over book but it help how James give us 2 times slot when we saw us tight. a good night.

Notes about the shift in general:  When I arrived the recycle dumpster was closed and locked. When I entered I went to the Ops meeting. I completed the BEK and the Houston Deli truck orders. I was able to get the gallon jug caps item number and they will be ordered on Monday's truck. We thought that we were having another Health Inspection from the City of Houston Health Department, but it was a false alarm. He was just in to place an order. He said we are one of the few places that he trusts to be clean. Raul completed the work on the front door. There are a few small gaps, but it is better than before. I sent pictures to Slack equipment. We had active sales this shift, but it was not very busy. I covered Marsal so that Ramona could go to lunch and help on the Roto line. Break started at 6:45 p.m. and ended at 8:30 p.m. All BOH team members were able to take breaks. Notes about the shift in general: When I arrived the recycle dumpster was closed and locked. I attended a brief Ops meeting or I was regrettably running late for the Ops meeting. After the ops meeting, I placed the truck orders and walked the BOH checking on health inspection readiness. There are still a few areas we are working on like ceiling tiles and cooler floors. I am creating a checklist for the upcoming box lunches that are coming soon. I met with Will and he made a number of great suggestions for our box lunches. It was a steady shift with needed pops. 6/21/25 Saturday Mid w/Raymond

Notes about the shift in general:  When I arrived the recycle dumpster was closed and locked with a few items on the ground around the bin from the BK guests. I met Daniel, the individual that agreed to take the pepperoni to Austin. 22 Cases of pepperoni were sent to Austin. I completed the K-Mods schedule for next week. I spoke to Zaine, the tech. with Ecolab pest control and he informed me that tree roaches are not covered in our agreement. CG and I agreed to allow Ecolab to treat the exterior, at an additional cost. I sent a message to the vendors regarding their July 4th delivery schedule and I am awaiting responses. I picked up whole milk, but Specs is out of anchovies until next week. We are still waiting for the City of Houston Waste Water test of our grease trap to come back. We had a needed pop that helped us to bring sales up. All areas were very busy. I covered Sub/Salad for Leti's break.
