7/30/23 Sunday p.m. w/ Raymond

Notes about the shift in general:

  This blog covers from 1p.m. -10p.m. The shift started off fsirly slow and then picked up around 5p.m.. Marsal was steady with sales. I had the opportunity to assist FOH with running slices due to the volume of slice ordrs. Leti was overwhelmed at sub/salad so I jumped in to give her a hand. We were able to keep up with the volume. Whole pies were moving very well at rotoflex. The rotoflex did have four fly pies due to over bake, miss topping and size being to small. Our new pounder Joshua is learning our process very quickly. The prep list wasn't very large. Dina was able to plow through most of the list before she was cut. Meredith had a large dough make list. She jumped in and banged the list out. When Bailey came in the dish area was backed up, but he was able to get caught up quickly. We are still doing well with the medium boxes are BEK Rep. Brian found for us. The print quality on some of our pizza boxes is still not resolved at this time.


Next shift be on the lookout for:

2. KMOD stuff: I sat down with our new pounder Joshua and we covered his training on pounding and he is doing very well. He has a good grasp of our dough quality and what we are looking for in our quality dough

We want to continue to monitor the use of semolina

5. Labor for the shift: 7%

Dough/Dish: Jose and Meredith did vwry well completing the dough list

Prep: Dina covered prep for the a.m. and as she did very well

Notes for FOH: I was able to assist the FOH with running slices. Carlos called for slices to be ran but there was one available to assist
