Monday 9/26/23 BOH PM Lana

Notes about the shift in general:

 it wasn't busy but it felt like we were in the weeds for like 3 hours. it was nearly impossible to keep up and we ended up pushing a lot of things back to roto and i worked the roto for a bit. lorena split her time with pizza and subs. i wasn't able to lend much help to bailey but he managed to get his list done. breaks didn't get run until 9:30 when things chilled out. i did have meredith come in for 2 hours to get stuff for dessert ready for tomorrow. we did have to block of some time slots to catch up at some point. ryan was helpful with this.




Next shift be on the lookout for:

iceberg is coming in with hardies
we will need 4 quarts of heavy cream and 3#s of cream cheese for dessert tomorrow

The stuff about the stuff:  

its taking away time from the oven person to run pizzas to the back and that time cam be used to assist with topping and help us not to fall back

Notes for FOH:

great communication. bo was great today and ryan really keeps a shift moving

please make sure that everyone is aware that there are no alterations on the sicillians.
