Notes about the shift in general:
Orders were steady, slices were moving, prep load was heavy. Everyone staying fluid between stations and prep helped everything get done.
Next shift be on the lookout for:

Sicilians still sticking to the pan. Also, some of the romaine from yesterday looked bad in a way that makes me think they were not removing undesirable pieces of lettuce as they were prepping it, and just put everything in the bus tub. A little was tossed and replaced with today's romaine. Otherwise, beautiful food, delicious slices, sauces and dressings approved.

8. Repair issues:
Having to cycle between the rail being on and off, because it starts freezing when it reads 40 degrees, and there is a good amount of ice every morning. I am told this is normal, and it is designed to hold food in the 20-30 degree range, but it is affecting product, namely vegan cheese, spinach, onions, tomatoes, green bells. Nothing has needed to be tossed, because we have kept a close eye, but still an issue.
