SATUDAY 9.21.24 BOH AM WILL & pm w/CG Swing

Notes about the shift in general:

Started off extremely slow and got progressively busier throughout the day. Knocked out house pies, and helped Jose with garlic knots to start. Ran breaks early. Gradually ramped up and got pretty solid around noon. Slices and pies were moving. Great team.


Came in at 12pm and it was slow when I got in. Parking was not too bad today but as day went on street parking was full throughout the day. Got some good steady pops in marsal today. I ran in marsal when I got in and was there until Ramona came in at 4pm for pm shift. Team did great job of keeping me stocked up and never ran into any issues. 



Next shift be on the lookout for:

The only things that we were low on--cucumbers and dry salami--have been taken care of. Raymond is bring dry salami tomorrow

We just need to keep eyes on proteins. All seem good

4/10 5/5- kept up did not have issues tonight from boh team. 

2. KMOD stuff: I let Danilo know that he could stay and close instead of leaving at 11pm. Just want to play it safe last two hours we are open with no kmod and only key holder in boh. Made sure to look at product before I left to see if there was any issues and did not see.

3. Food stuff:

Sicilians have really been sticking to the pans today and yesterday. They have a good amount of oil (too much even?) and were not cold so I'm not sure what the problem is.


Sicilians still sticking to pans pretty good tonight. Just keep eyes on as we go through this cycle with our pans so let's hope it eases up soon!

Dough/Dish: Jose, a beast

Meredith did great job finishing up Sicilians and keeping up with dish pit with no issues. She even got ahead for cleaning in boh. Very strong in this position.

Prep: Dina, always an amazing job

no prep in pm. Stations do prep if needed. All prep done in am so no issues in pm with prep.

Z1R: Juan, killed it

Danilo did great on pounding. Carlos and Jean Carlos also came on line and helped through our pops on line to get pies going.

Z2R:

Z3R: Ronaldo was locked in on roto and turning out some great looking pies

Gabino and Carlos ran roto. They rock it every time, really solid!

Z1M:Jean Carlos did great and went back and forth to help out on roto line as well. Really great to have him on the team.

Z4M: Ramona was a beast as usual up in marsal. Jean Carlos and her are really really solid together. They got busy up there and had no issues as between them they cooked off house pies and got all the slices out!

Sub/Salad: Evelyn, happy to have her in the a.m.

Leti came in and got station ready. We do need to get with Leo as when he opens he does not leave it stocked for pm on regular basis so lets make sure we get with him and make sure we are right on the pars for salad station. Leti did great with making sure team closed down correctly and she will also be a key holder tonight utilized for boh.


6. How did you show love?

Made sure to keep all dishes on line to dish throughout shift for team to not have to leave line and also asked and grabbed items that they needed from prep coolers and dough cooler. Worked on line with them entire shift.

7. What did you teach someone today?

8. Repair issues:


We need to have the wall fixed at dough station as we are making our team work in an area that is not set up correctly for them. They need their shelf back up. I will be putting on ops agenda as this is important for the team. 

The stuff about the stuff:  

Bailey being caretaker"security" has been really nice yesterday and today. He has been on it! Really great to see!He made sure that houseless stayed off patio and out of parking lot. He bussed tables, ran slices and greeted and opened the door for guests. Really great to have him in this position. Next week I only had one day to give him for this but I will be working towards trying to get him in this position for the weekend when we are busier. He did have one person who did tell him that he was going to come back and shoot him. I let Bailey know any threats we can and should call cops. Let's hope that it was just an empty threat as Josh and him know his discription so if he does show back up they will know. Just need to be very aware of these things as being in Houston alot of people in the city do carry. Something we need to discuss in ops and modsquad as everyone will handle someone like that differently so just want to touch base with our team about this. 

Notes for FOH:FOH did a really great job of hustling as there were 4 of our team members this weekend out of town so we were down a person up front in pm. Having Bailey was a huge help with this but all and all everyone worked together and made it happen. Good job handling the pops coming at you all and not panicking.

  Notes about the shift in general:  When I arrived, the dumpster was closed and locked. I walked the store and confirmed inventory and placed PFG and BEK  truck orders.  I worked on the new shift lead training program. Father's Day was busier this year. Last year we ended at Net $8,748, we are current at Net $12,010. The shift started slow but then picked up slightly from 6:30 p.m. to 8:30 p.m. Bresks started 6:30 p.m. and ended at 8:00 p.m. All team members were able to take breaks.  The World Cup tomorrow: The accident on the transit line that caused bus routes to fill in, could have impacted our sales.  Next shift be on the lookout for:  Volume pops during the day. 1. Notes about the shift in general:  When I arrived, the dumpster was closed and locked. I stopped to pick up tomatoes due to the sharp increase in pricing. I walked the store and checked supplies before placing the BEK truck order for tomorrow. I called Republic again regarding their not picking up recycling. I was informed that one of their drivers called off and that impacted a number of routes. They will pick up tomorrow. I called our Houston Avocado Rep and we discussed price corrections on tomatoes and when we could expect to see them. At this time they anticipate that pricing should get back to market norms in 1-2 weeks. In the meanwhile, I will continue to purchase 4X5 tomatoes from HEB at significant cost savings. The shift started slow and then picked up at 6:00 p.m. Both the Roto and Marsal lines did well during the pop. Notes about the shift in general:   starting the day, it was a little slow so we were finishing up with the preparation and we also made cherry Pepper, when those from the afternoon came in. And Fredy today, which is his first day, I started showing all the areas, we took a tour inside the restaurant, then I explained to him how to work in the oven and he also told me that he already knew something, but he also told me that in other places it is always different, so I told him how it works with us, and I also told him to stretch a Pizza and put it in the oven, in stretching the Pizza he is a little lacking and in the oven he is also a little lacking, but he already knows how to cook it well, and also cut it, he almost knows how to complete, he just lacks a little speed, so I left him with Danilo to teach him more and meanwhile I left Ramona in the salad area, while Evelin did all the preparation for tomorrow, since in the morning there will be no one in the salad, so she made the T...
