4/27/25 Sunday Mid w/Raymond

Notes about the shift in general:  When I arrived the recycle bin was closed and locked. When I entered I placed truck orders for BEK SA, BEK Hou., SOFO and PFG. It was a steady shift with our highest sales at 6:00 p.m.. I covered the Marsal, Sub/Salad and Roto lines during breaks. Breaks started at 6:45 p.m. and ended at 8:00 p.m. All BOH team members were able to take breaks. The houseless were very active in the area. The security guard from Seal Security responded to a call for assistance when a man threatened Ryan with a bottle.

This week HISD children are out of school Friday. First Thursday is this coning Thursday

Sicilians had a good rise and baked off nicely. Dressing were tasted and approved

Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH
