SUNDAY 5.25.25 BOH AM WILL
Notes about the shift in general:
Solid shift. The line was busy from the start and our lobby filled up right away. Before opening I helped Jose knock out garlic knots and set up house pies for marsal. About 5 minutes after opening the health inspector came by for our annual inspection. More notes about that in slack under midtown/modsquad. Our main ding was for meatballs not temping properly, the other was for the gaskets on the produce cooler door, and general cleanliness of the shelving in the produce cooler, the ice machine, and the outside of the coolers next to the ice machine. He was primarily positive and came back in the afternoon to eat. Team stayed busy and there were several pops in addition to prep. I also ordered produce.
