11/26/25 Wednesday Mid w/Raymond

Notes about the shift in general:  When I arrived the dumpster was closed and the lock was beat-up pretty bad. I narrowed it down to the Republic driver damaging the lock. I have a call into their office about the lock. When I entered I started the PFG order immediately. Their cut off was 11:00 a.m. I then entered the BEK order. I followed up on vendor credits and communicated with Delmy regarding the outcome. I completed and posted the K-Mod's schedule. The BOH schedule was completed by Will and published. I have been unable to get a satisfactory response regarding Boar's Head grated Romano. I contacted the corporate office and I was informed that the product has been recalled and there is no eta on if or when it will return. Will and I completed the shift hand off and everything was set up for success. The shift was not as busy as last night. Breaks started at 6:30 p.m. and ended at 8:00 p.m. All BOH team members were able to take breaks.

The sicilian had a nice rise and baked off very well. Salad dressings were tasted and approved


We had 7 sicilians for sale at 8:00 p.m.

Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH
