MONDAY 1124/2025 BOH PM RONALDO

Notes about the shift in general:

 The shift started quite slowly, which meant Juan had to leave early. We were on the line, but it was still too slow, so there were no problems. When the afternoon shift arrived, I took my break. When I went downstairs, I saw it was a bit slow, so I started taking all the lids off the containers where we store the seeds. I had Meredith wash everything, and around four o'clock it started to pick up a bit. We also started filling pizzas for the front, and around five o'clock it started to improve even more. So I started wrapping pizzas, and around six o'clock I started taking breaks. That time was also very good. We were selling a lot of takeout pizzas, and the whole team took their break. Then I did a walkthrough to check that everything would be okay for tonight, and that's how I finished my shift.

The Sicilian pizzas are nice and fluffy today. The pizza slices came out crispy, and the dressing and pizza sauce were great. It has a really good texture.
