SATURDAY 2.28.26 BOH AM WILL
Notes about the shift in general:
I started off the day helping Jose with garlic knots, then Juan with prep and setting up the line. I had Jose make one additional large dough in anticipation of the large order on Wednesday. There is no prep person tomorrow so I had Belinda and Dina do double prep. We received from Houston Avocado, everything checked out. When Ronaldo got here I ran to Gordon's to get mayo and Mexican coke. It was their last case of coke. When I came back I had an interview for the dishwasher spot we are looking to fill. Candidate seemed solid, I will kick him up to Raymond. Marsal was in full swing by that time and we were down one person, so I jumped on slices which kept moving full speed until about 3pm. Lots of groups, lots of single slice tickets, so it felt busier than the numbers would indicate. Good shift, hopefully this keeps going through tonight.
