Notes about the shift in general:
When I started my shift, everything looked pretty good. Everything was in order. I began by handing out the prep list at each station with Pedro. We started filling orders on the line and also doing some prep work. We had a ticket for 15 pizzas by 10:40, as well as a Party Salad order. We hurried and started making all the pizzas for the front, then we started on the larger ticket. By 11:00, we had everything ready. The large ticket went smoothly. I started the breaks; the whole team took their break starting at 1:00. Things slowed down a bit. We finished some prep work, and I also set out two bread recipes for today. I received Houston Deli, and everything is in order. I also gave someone a Cherry Pepper to make since things were slow, and today Dina showed me how to make cookie dough, taking advantage of the fact that things were a bit slow. Around 3:00, Lety left. Pedro also left. I was alone for 40 minutes. There were no problems since things were quite slow. When the afternoon shift arrived, I took the opportunity to place the Houston avocado order for tomorrow. Then I double-checked that nothing was missing. That's how I finished the day.

The Sicilian pizza needed a little more time to rise, so I put it next to the heater to help the dressing and pizza sauce rise. It tastes great!
