SATURDAY 8/1/2026 BOH PM RONALDO

Notes about the shift in general:

The day got off to a pretty good start. We finished up some prep work and stocked the front line with plenty of pizzas; a lot of orders started coming in around 4:00 PM, right as the rest of the team arrived. I checked to make sure everything was set for the evening rush. Things slowed down a bit around 5:00 PM, so we took the opportunity to restock the line, but it got really busy starting at 6:00 PM. We were caught off guard by the volume across all stations—tickets were pouring in—so I went on my break, and the rest of the team took theirs as well. I helped Gabino at the oven, tidied up the vegetable walk-in cooler (disposing of some boxes), and did a final check to ensure everything was ready for the night. That’s how I wrapped up my shift.
