TUESDAY 8/11/2026 BOH AM RONALDO
Notes about the shift in general:
At the start of the shift, everything was going well, but when I tried to turn on the oven, it sparked, shut off, and wouldn't start again, so I let Raymundo know. We checked it out, but it still wouldn't turn on. We decided to go ahead and prep the pizzas for the front counter; I gathered the remaining ingredients and started making them. Raymond arrived around 10:00, checked the oven, and got it working again, so we proceeded to cook the pizzas for the front. I also provided two bread recipes today, though tomorrow they’ll only bake one type, saving the other for Thursday since they’ll be making cheesecake tomorrow. By 11:00, everything was ready, and I began scheduling breaks for the whole team. It was a pretty good day; Raymundo helped out front by selling pizza slices. Once the afternoon crew arrived, I placed the Houston order—including avocados for tomorrow—and wrapped up my shift.
Next shift be on the lookout for:
Houston avocado
