8/3/26 Thursday Mid w/Raymond

Notes about the shift in general:  I attended the bi-weekly Ops call. When I arrived, the dumpster was closed and locked. I walked the perimeter and everything was acceptable. I walked the store and confirmed inventory. I placed the Hilltop FF,  PFG and BEK truck orders. All invoices were scanned to Xtra Chef. I am working on filing the added FOH shift for Sunday. I reached out to a few team members and I should have the FOH shift filled by Friday. I am working on the Food Labor spreadsheet. I met with Lane Schultz assistant and confirmed that they were picking up the order. 

I briefly met with the Reps. from Gordon's Foods. I was informed the one of the off duty officers working First Thursday was buying food and drinks for the houseless. I spoke with the officer and explained the reason we were instructed by HPD Crisis Intervention team to not provide meals to individuals asking for food. There are a number of resources in the immediate vicinity that provides assistance. I had to ask officers to not park their vehicles on Winbern blocking our entrance. 

During my Guest Connections I met a number of appreciative guests that sang the virtues of our team and products.  One guest said she can't wait to get home, sit down and "Big us up" on social media. Please let me know if I need to translate that. SHOUT OUT to Bailey for doing an amazing job on detailing and cleaning the ice machine. 

The shift was steady and very busy . The momentum started to build around 6:00 p.m. and continued until 9:00 p.m. Breaks started at 6:00 p.m. and ended at 7:45 p.m. All team members took their breaks.

2. KMOD stuff:

* Please continue to challenge PAR bake on the house pies.

* FOH please go over the deferred orders with the k-mods.

* Please remember to keep the Marsal slice tracker updated.

* Please ensure that the cooks are not splashing water on the employee restroom door. 


3. Food stuff:

* Most of the sicilian pies had a nice rise, and a light taste. 

* Whole pies were looking very nice.

* Salad dressings tasted and were approved.

* Please continue to complete temperature checks on all items

6. How did you show love? I gave the Drew Brown and verbal high five for receiving a guest compliment saying that he is amazing.  


Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH.
