MONDAY 3/24/2025 BOH PM RONALDO

Notes about the shift in general:   Starting my shift it was pretty slow and I had a little meeting with Raymond and Will talking about cleaning and other things. At the end I was in the salad area. Then at about 4:30 I was baking pizzas since Carlos told me that there was an accident and that he was stuck in traffic and that he would be a little late and we had a ticket for 14 pizzas at six before we put the pizzas in he arrived on time and finished baking them while I was covering and at about seven and I started with the breaks but at that time it got pretty busy and since Letisia was going to leave at eight but I saw that it was too busy I told her that there was like another hour and we finished the break around nine from there I was in front selling slices of pizza until closing. At about 10 it got a little slow and that's how my shift went. 3/23/25 Sunday Mid w/Raymond

Notes about the shift in general:  I picked up Mexican Coke on the way in. When I arrived the recycle bin was closed and locked. When I entered CG went over the upcoming Car Art Show event. There is some planning needing to be done. We will do a walkthrough of the process and identify the best way to successfully participate in the event. The shift was not very busy. We had a few pops that helped sales. Breaks started at 6:30 pm and concluded at 8:00 p.m. All BOH team members were able to take breaks. Our sales were good yesterday and we went through quite a bit of inventory. I am going to pick up a few cases of pepperoni tomorrow. Just before it was time for me to leave we were hit with a very large pop. It would be value added to find out where these pops are coming from. Today was the last day of the rodeo and that could have been a major contributing factor. Notes about the shift in general:   Starting my day it was a little cloudy when I entered the restaurant everything was pretty good everything was organized and then Wendy sent me a message that she would be a little while since her car broke down and I told her that there was no problem then I made the preparation list when finished I helped her a little with the cheese while she arrived then we started filling the line together with Juan around 10 we started all the pizzas and when it opened we didn't have a ticket and when Evan arrived I took the opportunity to start the break around 11:30 we managed to finish around 1:30 in front a lot of Rebanal De Pizza came out the pepperoni Sicilian sold a lot and we were also finishing with the preparation and around three I placed the order for Houston avocado for tomorrow and then I was in front and that's how I finished my shift for today Next shift be on the lookout for: Well, we're pretty good with the preparation. SATURDAY 3/22/2025 BOH AM RONALDO

Notes about the shift in general:   starting my shift upon entering the restaurant everything was in place the only thing the machine where the tickets come out yesterday was not working at the end and they left a paper there to let me know I was already checking what I had so the best thing I did was turn everything off and then turn it on from there it started working then I started making the preparation list when I finished I counted the dough since Pedro called me that there was a lot of traffic and that it took a while when he arrived we started to fill in the line then at about 10 we started the pizzas and at 11 we had a lot more tickets in front and in the salad while we were also finishing the preparation and when Wendy arrived she was in the salad to learn more and I took advantage of starting the break and we managed to finish around two Leo went to finish all the preparation and also help Jose while Wendy stayed at the salad station and at about 2:30 it got pretty slow ...

FRIDAY 3.21.25 BOH MID WILL

Notes about the shift in general: Today was a busy Friday, lots of slices in the a.m., a deferred 10-pie order at 5pm, segueing into a busy p.m. It just calmed down for a minute and we are restocking Marsal. It feels like the next wave is impending. Most of the down time I had was used to discuss everything Raymond and I discussed in our meeting with Ronaldo. I told Juan, Leo, and Pedro about ceiling tile and cooler cleaning expectations for next week. Cynthia told me about the current plan for the art car parade and I brainstormed with her how to meet those needs. I am working on crosstraining Ramona and Wendy on salad/sandwich this week which will be crucial for any future plans. Savannah will start dough training this week so we can maintain and increase our level of bread production. Aaron will be training the following week. FRIDAY 3/21/2025 BOH AM RONALDO

Notes about the shift in general:   starting my shift when I walked in the dumpster was closed and everything was pretty clean and there was merchandise so I started tidying up when I finished I made the prep list then more merchandise arrived too so I started tidying up and refilling and throwing away the empty boxes then I helped out a little bit refilling the line then at around 10 we started the pizzas and we have three pizzas by 11:00 around 11:20 I started taking breaks but around 12:30 we got a ticket for 15 sandwiches but we managed to finish and get them out on time working as a team and with the breaks we managed to finish around 2:00 from there we refilled in front since they were also selling a lot of pizza slices and around 3:00 it got a little slow so we took advantage of refilling the line and also finishing up the prep and then I made a small order for Houston avocado for tomorrow Next shift be on the lookout for: All the preparation is quite good, we are up to date...

3/20/25 Thursday Mid w/Raymond

Notes about the shift in general: When I arrived the recycle dumpster was closed and locked. I attended a brief Ops meeting or I was regrettably running late for the Ops meeting. After the ops meeting, I placed the truck orders and walked the BOH checking on health inspection readiness. There are still a few areas we are working on like ceiling tiles and cooler floors. I am creating a checklist for the upcoming box lunches that are coming soon. I met with Will and he made a number of great suggestions for our box lunches. It was a steady shift with needed pops.
