SUNDAY 5.25.25 BOH AM WILL

Notes about the shift in general: Solid shift. The line was busy from the start and our lobby filled up right away. Before opening I helped Jose knock out garlic knots and set up house pies for marsal. About 5 minutes after opening the health inspector came by for our annual inspection. More notes about that in slack under midtown/modsquad. Our main ding was for meatballs not temping properly, the other was for the gaskets on the produce cooler door, and general cleanliness of the shelving in the produce cooler, the ice machine, and the outside of the coolers next to the ice machine. He was primarily positive and came back in the afternoon to eat. Team stayed busy and there were several pops in addition to prep. I also ordered produce. SATURDAY 5/24/2025 BOH PM RONALDO

Notes about the shift in general:   Starting my shift, I was stretching pizzas until the other afternoon shift arrived. When they arrived, we filled them with pizza. In front of them, I helped Julio with the Sicilian ones since it was his third day of work. When we finished, I left him. Then I went over to cover the pizzas. At six o'clock, I started taking a break. It got pretty busy. It made everyone on the team work hard to get all the pizzas and sandwiches out. Then it calmed down a bit around 7:30, and they finished their break since it was pretty calm. I made Wendy take advantage of the time to make cream for cannoli as well as lemonade. While it calmed down a bit, I checked that everything was okay for tonight and that nothing was missing. And that's how I finished my shift for today. 5/24/25 Saturday AM w/Raymond

Notes about the shift in general:  When I arrived the recycle bin was closed and locked. When I entered the building it was a good close and all units were at the correct temperature. I completed the prep lists and distributed them to each station. We continue to prep. iceberg at 9:00 a.m. and at 2;00 p.m. I walked the store looking for any areas needing attention. Jose was very busy at dough prep so I baked off the cookies to help him out. I will be off tomorrow so I entered the truck orders for tomorrow today, PFG has the lowest price on flour at this time, $20.95. It was a steady shift. It did not seem as busy as sales proved to be. All BOH team members were able to take breaks. I picked up three cases of Mexican Coke as a precaution. The day could prove to be busy tomorrow. Next shift be on the lookout for Please monitor linen. Notes about the shift in general:   starting my shift and it was a little calm and when the afternoon shift arrived, we were filling up with pizza in front and we also had a ticket for 10 pizzas for six from 5:30 it got pretty busy, the tickets didn't stop and when we finished the big ticket, more and more came out so around six I started with the breaks. From that time on the ticket filled up, but the team we have could handle everything, since it was also quite a lot in the salad, a lot of tickets came out and they finished around 7:50 from there, I was checking that everything was ok for tonight, and also helping him a little more, and so I finished my shift for today Next shift be on the lookout for: Well, we're pretty good for tonight. 2/22/25 Thursday w/Raymond

Notes about the shift in general:  When arrived the recycle bin was closed and locked. When I entered the building I started on the truck orders for PFG, Houston Deli and BEK SA. I walked the store and I found areas in the walk-in cooler that needed organization. I went over product pricing with some of the vendors. Some of the pricing was incorrect. The email verifications was complete and the notification was sent to Charles. The schedules were reviewed, adjusted and published. The shift started a little slow and then we picked up sales at 6:00 p.m. We had 1 overbooking at 7:30 p.m., but it worked out and all pies were on time. Breaks started at 6:30 p.m. starting with Marsal, Sub/Salad and then Roto. All BOH team members were able to take breaks. Notes about the shift in general: We received a PFG order today, cooked off 2 bread batches, made 2 more for tomorrow. I ran to purchase milk, anchovies, and AA batteries. Today was much slower compared to the rest of the week. I cut Savannah early from salad/sandwich. Food stuff: Fluffy Sicilians, house pies were looking good, dressings were approved. We tossed two containers of iceberg lettuce. I had Dina cut lettuce for the PM at the end of her shift. 4. WEDNESDAY 5.21.25 BOH AM WILL

Notes about the shift in general: Busy first hour: two 6-pie and party salad deferred orders were joined by several tablet orders and call ins to make for approximately 30 pies. After that died down slices took off, we stayed busy until 1pm, then started breaks and working on line prep. We received orders from BEK and Houston Avocado. I sent back a case of Romaine that looked near wilting to HA, texted Jeanne, added to the credit tracker, and got a new case out that looks significantly better. Dough team did 2 recipes of sub bread today and will do 2 more tomorrow to make sure we are good for the weekend. Mid-afternoon I finished unboxing and making sure all new product was dated. I was told to check email addresses so I printed out all BOH employees with their currently listed email addresses and started the process.
