7/25/25 Friday Mid w/Raymond

Notes about the shift in general:  When I arrived the recycle dumpster was closed and locked. When I entered I checked the truck orders as well as FIFO. Final payment was made with A&B labs for the grease trap testing. I worked on BEK order guide and removed some items that should not be there. I contacted Houston First for more information on membership. The shift started off steady and started to build in sales. The Marsal was stocked and guest ready by 5:00 p.m. The rain slowed sales down a little. Breaks started at 6:30 p.m. and ended at 8:00 p.m. All BOH team members were able to take breaks. Next shift be on the lookout for Produce quality 1.How many pies did we run on the timesheet?  4/5 2. KMOD stuff: Please keep an eye on product dates 3. FRIDAY 7/25/2025 BOH AM RONALDO

Notes about the shift in general:   Starting my day upon entering the restaurant, everything looked pretty good. We already had quite a bit of merchandise, and we started putting everything together once we were done. I made the prep list and handed it out to each area. Then Houston arrived, checked everything was in good condition, then I put them together, and gave everyone a date. We started filling up the line. Then we got a 30-pizza ticket for 11:30, and also salads, so we rushed to fill up the pizza. In front of us, at 10:30, we started with the large ticket, and it came out on time. In the meantime, the ticket came out, but we kept up the pace. So I started with the break around 12:00, and we finished around 2:00. From there, we were finishing up the preparation. Then Gerardo informed me that he had to leave for a moment since he had an appointment, so he was rushing with his preparation list, he finished it and left around 1:30, but he had already finished everything on his...

7/24/25 Thursday Mid w/Raymond

Notes about the shift in general:  When I arrived the recycle dumpster was closed and locked. When I entered I went to the Ops meeting. Following the Ops meeting I started the truck orders and completed SOFO, BEK and Houston Deli. I contacted the PFG Rep. about the case of 20# bags that arrived broken open. The case was added to the credit tracker. Tomorrow I will contact A&B Labs to make final payment on the grease trap testing. The shift started a little slow and then Marsal had a small pop. Roto picked up orders as well as Sub/Salad. Josh informed me that a guest thought that there was mold on the bottom of her sub. I checked into it and found out that a small amount of plastic was on the bottom of the garlic knot tray and that transferred to the sub. I spoke with Evelin and she immediately said "Yes, we have to be more careful." I spoke with the guest and apologized for the mishap. She said I love your subs, I just did not know what that was. I thanked her for brin...

THURSDAY 7.24.25 BOH AM WILL

Notes about the shift in general: We received from PFG today. The white paper bags they delivered looked like they had fallen off the truck at some point. I let Raymond know. On the plus side, the red bells sourced from them looked great and were $10 less. Despite a slower shift we sold about 16 RKT, we'll have just enough to finish the shift. We needed more marshmallows to make another recipe to cut tomorrow morning, so I ran to the store and grabbed those and also milk. Lots of prep, not too busy for a Thursday, especially compared to yesterday. Hopefully it's just the heat keeping folks away and once it get's dark things will pop off. Next shift be on the lookout for: Produce quality, especially tomatoes and lettuce 30 pie, 4 party salad at 11:30am. Raymundo coming by with paperwork for orientation at 10am. 1.How many pies did we run on the timesheet?  4 across the board 2. KMOD stuff: I went over correct hot sub procedure with Leti. 3. Food stuff: Another solid day for ...

7/23/25 Wednesday Mid w/Raymond

Notes about the shift in general:  When I arrived the recycle dumpster was closed and locked. When I entered I started on the PFG truck and contacted the Rep about pricing opportunities and items that are showing as out of stock. Please keep an eye on the ricotta prep. I have to order smaller tubs of Galboni ricotta classic in the 3lb tubs instead of the 5lb tubs.. PFG will be out of the 5lb tube out of the 5lb tubs until 7/29/25. I entered the miss pull case of cheddar cheese in the tracker and contacted our BEK Rep. They sent us cheddar instead of the vegan. I contacted A&B Labs to make arrangements to pay for the grease trap testing. They took my number and I am waiting for a call back. The shift was a little slow for a Wednesday. We had a few small pops at Marsal. Josh requested second eyes on a sicilian pie that had a burnt bubble. It was a fly pie and it started immediately. Breaks started at 6:30 p.m. and ended at 7:45 p.mn. All BOH team members were able to take a br...

WEDNESDAY 7.23.25 BOH AM WILL

Notes about the shift in general: We received orders from BEK and Houston Avocado today. HA took back the tomatoes and iceberg that I returned for credit. They gave us another brand of roma tomatoes after the last set were too mushy for dicing, looks better. BEK gave us a box of shredded cheddar instead of vegan cheese, Raymond is following up on the situation. Auto Chlor also came by today, checked us out, topped us off. He let us know that floor break usage is climbing again. I marked the current bottle. It is also worth following up with Julio to make sure he is not using an excessive amount of floor break. I had an interview with Gerardo's brother, Raymundo, he will be back on Friday at 10am with paperwork for orientation. We also cooked off two batches of bread. It was a decent Wednesday with a few 5-pie orders in the first hour, a significant amount of sandwiches for our lunch rush, and steady flow of slices all day. In my down time I organized storage areas and finished next...

TUESDAY 7/22/2025 BOH PM RONALDO

Notes about the shift in general:   Starting the day I spent a lot of time in the salad area and also rolling out pizza, but it was phenomenal teamwork, since all the tickets came out on time and with the help of Will and Pedro. We were taking out all the tickets until the afternoon team arrived. I took advantage of my time being Houston Avocado's order. When I finished, we were filling up in front, but it was a little quiet. I already told Evelin that there were some preparations missing, since this morning we did the basics, but a few more things were needed. She did them and starting around six and continuing with the breaks and they managed to finish around 7:40. From there, I was checking that we were up to date with all the preparations. It was a little slow day, not like yesterday, and that's how I ended my day today. Next shift be on the lookout for: we have absolutely everything 1.How many pies did we run on the timesheet?  4/5 2. KMOD stuff: 3. Food stuff: The Sicili...
