People:Am: everyone showed up in the am staff. They practiced the 7 pizzas on the line and then I ran tickets through the line. Afterwards we went through the pizzas which are harder for them which are the white pies and the sausage ricotta. Pizza line did well. Salad and sandwich did well today. Everything looking really good coming out. Prep team did great with staying busy. 
Estalla trained on dough. She made one of each dough excluding pan torta. She's a good place holder until we find a replacement for Kevin.
Bailey helped clear out the racks downstairs and relocate upstairs
Roxana needs to get out of the habit of having people do things for her. 
Gambino caught on really fast to roto and I think he's going to be a great addition.
Kevin is no longer working with us though we should reach out to let him know that he can pick up his last check Friday as we will not be here Thursday

Product: 
Dough was made.
Sicilian did not rise we put it into the cooler so it can be looked at in the morning and we made another batch of Sicilian just in case
Bread was way too over proofed we will need to monitor it. I got with dough and they will be setting a 4 hour timer labeled bread so that it can be checked
We had to throw out turkey as it was old and in the pizza cooler. We will need to make sure prep is storing it properly
We were out of fresh mozzarella and provolone by end of day but they are on order for tomorrow. These were on our order for today but soft never showed. I reached out and they told me it would be here first thing Tomorrow morning
Also finally did come in and get us restocked with towels and shirts

Procedures:
Taught estalla doughs
Went over 7shifts and blogger with Cynthia M.
Did check in and quizzes with staff throughout shift

Presentation:
Cynthia organized the dry storage and Bailey and CynthiaM followed through with other organizations tasks through the pm shift.
Bailey, CynthiaM, and I organized the dough cooler. Let's they to keep doughs in that general arrangement.

Preformance:
Everyone is still on track to learn. I think they need to work on memorizing and executing common things like the 7 pies and how much cheese goes on each pizza. Pm wise. 
They're running breaks better and coming back on time.
Prep is speeding back up as they did loose some momentum in the last couple weeks. We may need 1 additional prep in the A.M.
