• Today the slicer was relocated to a cart where it will be maintained at all times, thanks to Ross and Metler.
• The new mixer was also installed by Ross and Metler, but there seems to be a problem with the connection of the attachments to the mixer. I will get with the team and get this resolved before opening.
• We receive feedback from Jen on the dessert tasting. The tiramisu tested fine, but there’s still work to be done on the cookies.
• The cook Joshua came into work and was visibly unable to work due his condition. He staggered when he walked, his speech was clearly labored and he seemed very incoherent. I asked him to come to the office to speak with me before he started to work.
Kaylana was present for the conversation when I informed him that it was my opinion that he was unable to safely work. I instructed Joshua to clock out and report back to me tomorrow.
• Time evaluations was conducted on rotoflex, mersal and subs/salads.
o RotoFlex: Robil and Gabino performed very well.
o Mersal: Silvia performed very well at pounding. Roxana is getting stronger on topping and I feel that she will be fine. Chris and Maikel are coming along and we will continue to push a large volumes of tickets to get them up to speed.
o K1-k3: Gonzalo has pounding under control and he is doing very well. Bailey will need more time on topping but he seem interested doing well. Tamara topping is very close to HSP standards, but her speed is an area needing improvement.
• All checks were avoided and closed out and all managers and team members were clocked out
• Pest control came in to treat the restaurant. I was a little concerned that it was done during operating hours but I understand that it's not unusual here
• I will follow up a Cynthia on sandwich party trays
