 AM: Everyone showed up this morning except Michelle. She needs to be taken off schedule and we are going to have to part ways with her as we can not accommodate her second job as if she is on schedule she needs to be here. I have Dez on prep today as there are quite a few on pizza line due to marsal being closed this morning. I have 3 every 5 staged on pizza line from 10:30am-12pm. At noon I will have them break and then another round of timed tickets. I set up tickets for salad sandwich station as well but gave them 15 minutes between tickets as tickets generally do not come thru like crazy on this station like they do with pizza line. We had 22 logs of provolone going into Wednesday and with Thursday off we went through a lot of provolone for 3 days. We need to make sure they are not mixing up the two as we have not gone through that much mozzarella for us to be going through more provolone. Make sure they are not mixing them together and labeling them correctly. We will get more provolone on Tuesday but will have to run without on Monday as it's 4x as much to buy at HEB but they do have it. Cookies baked off great today! Right size, color and taste. Wendy ended up mixing the light brown sugar with the medium brown sugar and it came out correct. We just need to get cheesecake done and tasted so that all will be approved. Time trial from 10:30am-12pm went okay. Out of 36 pies I would have kicked back 16. Out of 4 Sicilians I would have kicked back 1 and with calzones out of 4 I would have kicked back 2. Only three tickets went over, one by 6 minutes and the other two by 1 minute. We took break after and now are doing another time trial with 2 every 5 and I let them know to focus and less kick backs this round. We went over issues on first trial and also let them know that 16 kick back pies would have killed the kitchen. We are getting better with topping dispersement on pizzas. I went over onion and broccoli cuts with prep. White onions need to be thicker and not so thin. They look horrible on pizza once it's cooked. Need to make sure that we are cutting big enough and also got with line on not to use if they see them like that. Broccoli needs to be tad bigger but not off from size needed. Just smaller crowns that came in produce from Houston Avocado. Today we are going to run without provolone, cep mozzarella and sliced mushrooms. We have it all coming in tomorrow so we should be good. We are going to monitor the provolone as that is a lot to go through considering 2 blocks of cheese make one red bin so not sure how we went through 22 of them in 3 days. We need to really monitor this. On the second round of time trials for line they hit all times. We did do 2 every 5 with an occasional 3 every 5 coming in as well. Only 1 kick back! We went over but we discussed being more on top of toppings and for Will to kick back before he bakes off in roto if need be. We will have time trials tonight as well. 

Time trials went very well there were no late tickets and all pies that came out were sellable.  Sub and salad station did very well when when went down to one person on that station during breaks.

The new mixer is working well and it should take considerable time off of the primary mixer use

  All prep was completed and all stations restocked

I called Auto Chlor and they delivered the needed chemicals. After I spoke with them they did not charge the weekend overtime charge for the delivery

I called Ecolab and informed them that we have the fly lights and that they are ready to be installed

  Joshua was a no call no show today after he was instructed to return today to speak with me about being sent Home yesterday. He is no longer with Home Slice Pizza

The dough walk-in was reorganized. Francisco and I will go over the dough rotation process for the cooler

The produce order has been placed for tomorrow

All tickets have been avoided and all management and team members are clocked out
