3/31/23 p.m. Friday w/ Raymond

1. How many pies did we run on the timesheet (⅖, ⅗, etc)? We ran 5/5 and 4/0. With long ticket time we went to 4/5 2. KMOD stuff: Rubil did not come in. There was some confusion about his being in the hospital 3. Food stuff (Notes about food issue REMINDER s) At marsal 1 spinach pie and 2 peperoni pies were discarded, not up to standard 4. People (Z1R, Z2R, Salad, prep, etc) (Salad: Juan- he did great, even helped top pies in downtime, wants to be a trainer, etc) Z3M- Z1M: Again, Silvia did very well tonight handling the pop. Prep: Eli and Anna  banged out the prep list tonight Z1R: Evan did very well on rotoflex pounding tonight Z4R: Gabino and Wendy did there very best to control rotoflex load and cut.  5. 3/30/23 Thursday p.m. w/Raymond

1. How many pies did we run on the timesheet (⅖, ⅗, etc)? We ran 4/5 2. KMOD stuff: Rubil called off and fortunately Will was able to stay  1.5 hours. 2. 3. Food stuff (Notes about food issue REMINDER s) Three slice pies were discarded. They were not up to standard.. 4. 1.  How many pies did we run on the timesheet (⅖, ⅗, etc)? We ran 4 on the 5s and 5 on the 10s 2. KMOD stuff VERY VERY VERY SLOW SHIFT!!!DEAD OUTSIDE, GRAY SKIES AND DID NOT SEE ALOT OF FOOT TRAFFIC AT ALL. THINKING EVERYONE IS GETTING READY FOR OPENING DAY TOMORROW FOR ASTROS WHICH STARTS AT 6:30 TOMORROW!!! I have gone over schedule for next week and only thing I see is adding Jose Puac back on from Thursday through Sunday in am to give us a dish, dough and prep person as Monday through Wed we are going to see about dough and prep handling dish as well. We have a list of those employees that are not on schedule and we are going to talk to them first before we post. At the latest we will post Friday. Something we also need to think about is they might not finish up this week and might not show up this weekend so let's be prepared for that and see if there are any holes.  We ran without Henry today and he is one that is off schedule next week and we are parting ways with. A few pies at the beginning had to be discarded. Some cookies did not pass our standards. 4. Food stuff (Notes about food issues) We went over the Sicilian proper portion of salsa. They were putting a bit too much 4. He was ontop of things Lino did well keeping dish pit organized. He also took care of Sicilian in Mateo absence  Henry NCNS and we had Lorena come in to work slices. She did well I'm both cooking pies and holding down slices. Mettler helped us run slices until she got here! I appreciate him so much for it! Please monitor Lorenas hours so that she doesn't go into overtime Jordan did notice schedule changes that were made a few days ago and did not initially come in for his shift. 1.  How many pies did we run on the timesheet (⅖, ⅗, etc)? 4/5 5/0 2. KMOD stuff Scrub done today. I got with a few people about proper job codes  3. Food stuff (Notes about food issues) Sicilian seemed okay. I threw away a good amount 5 day dough for mediums. They were not sellable. I don't like how the pies were coming out so Jose and I scrapped it pretty early on in the shift. 4. KMOD stuff: A reminder was sent to the cooktelling them to p[lace their brand shirt in the correct baf when they are done with them\ 3. Food stuff (Notes about food issue REMINDER s) The slices and sicilians were cooked to our standards.  4. People (Z1R, Z2R, Salad, prep, etc) (Salad: Juan- he did great, even helped top pies in downtime, wants to be a trainer, etc) Z3M- Z1M: Ronaldo was on top of slices. 1.  How many pies did we run on the timesheet (⅖, ⅗, etc)? 4/5 5/0 2. KMOD stuff I'm looking at ways to reduce the labor cost. Talked with Raymond again about flipping labor heavy pm instead of am to reduce the high labor percentage in the morning  Scrub completed and submitted   3. Food stuff (Notes about food issues) Sicilians seemed a bit over blown but they baked well.  We had a focus on slices today and most came out great they threw a lot away but it's in the hopes that they have more concern about quality. Idael and Roxana are doing great noticing what slices are unsellable 4.  We were closed today so we are baking off cheesecakes, making tiramisu, making dough and also prepping up items needed. We had a busy Monday with $17k so I made sure to stock up on certain items on my orders for tomorrow. We have plenty of Mariana coming in along with everything else. I saw that we ran low on clams with only 3 cans left and marinara was short by 1 can. I have made sure to up par on those. I also ordered NA Bev to keep pars of... Mexican Coke:20 Fanta:12 DrP:15 Topo:15 moonshine original tea:8 moonshine mint and honey:10 Izze Grapefruit soda:6 Izze Blackberry soda:8 Diet Coke: 5 cases BIBS for Maineroot: 1 bib back up on each I am starting with these as pars and will make adjustsments as needed. I do need the produce cooler shelf that we gave to foh for NA Bev to be organized well so that I can keep up with these NA bevs. There is still a Fanta on another shelf and they should be organized a lot better then what it is. We had a fly calzone that was kicked back. Charles reviewed the difference between a non-sellable slice and the perfect slice 4.
